Quick and Easy Lunch

What do you make with cauliflower, a pouch of salmon, 1/2 cup of peas and a little one who wants to cook? A quick and easy lunch!

Lia started out by ricing about half a head of cauliflower in the blender on pulse setting. The butterfly hat is optional but it does add a flair to her cooking!

She carefully poured it in a bowl and that was the start of something quick, easy, delicious and inexpensive.

Drizzle some Avocado oil in a fry pan and when it’s hot add about 1/2 cup of riced cauliflower. Stir it until cooked then add the cooked peas. Add about a tablespoon of butter and mix all together. Add 1/2 pouch of salmon, gentle mix all together and cook until heated through. You can use the entire pouch of salmon but since we only made enough for one meal, we saved the other half for next time. It’s also great as a snack on crackers. Lia made a delicious lunch for me and we have a bag of riced cauliflower left for at least two more meals.

Doesn’t this look yummy? Lia made a quick and easy lunch that was delicious! You can also add your favorite seasonings if desired.

I love having a little personal chef around, I never know if Lia will be preparing a meal, a delicious dessert or a refreshing smoothie!

  1. Martha, that looks delicious! Those are some of my favorite ingredients! Now, what is that loaf-with-tomato-sauce in the last image? Yummm!

      It was so easy to make too Kebba. That’s the last of our frozen lasagna that Alex made and put in individual portions. Lia added sauce then cheese before we heated it up. Delicious!
