Quick and Easy Dinners
It’s been awhile since I posted some of my quick and easy dinners so get your taste buds ready! Most of these dinners cost less than $5.00 per meal, some are closer to $3.00. When I go grocery shopping, I scan the meats and check out any sales or mark downs.
Salmon
I only buy wild caught Alaskan sockeye salmon and this is a quick, delicious and healthy meal. I sprinkle Fish Monger seasoning and cook the salmon with avocado oil. I poured a butter/lemon sauce over the top just before done and had a side of brown rice and green beans with slivered almonds. I have a variety of sauces I make for my salmon but this is one is so simple and quick to prepare.
Shaved Steak
You can’t get much simpler than this meal! It’s shaved steak from Kroger and I can make three servings for about $6.00 total. I saute onions and brown the steak with them, mixing in marinara sauce when it’s finished cooking. Adding a side of steamed broccoli makes this meal cost less than $3.00 per serving.
Are you ready for a quick lunch or dinner on the go? This is also made with the shaved steak with onions and sauce. I added shredded mozzarello cheese to both inside edges of the roll, cover with the steak and top with more cheese. I put it in the toaster oven until the cheese was melted and the roll was toasted. Sometimes a sub is all that’s needed to full you up.
Tuna Sub
While on the subject of subs, I love a tuna melt! Same as the steak sub, I added shredded cheese to both inside edges of the roll, top with the tuna and put in the toaster oven until the cheese melts. A can of tuna is about $1.00 so this is a very inexpensive meal. At times I will forget the roll and just add the tuna and cheese on a bed of lettuce making it healthier! For a variety you can add pickle relish and black olives.
Sirloin Steak
I love when I can find a package of beef or steak for 3.00! This was a piece of top sirloin and I cut it in pieces and cooked with Lia’s home grown peppers and onions. With a side of broccoli it made a delicious dinner. Notice me broccoli with my homemade cheese sauce looks tastier than hubby’s. LOL Since I got a 5 pound bag of broccoli florets for $5.99, each serving is about 50 cents!
Another great deal from Costco on super thick sirlion. After I cooked the steak, I topped it with grilled onions and added a side of my speciality recipe. I sauteed fresh/frozen green beans, tossed in some slivered almonds and dried cranberries and after all mixed together I transferred it to the pan I cooked the steak in so it was flavored with the meat juices! We don’t eat potatoes often but there’s nothing better than boiled new potatoes to complete a meal. This was one of my $5.00 meals, still very reasonable!
Looking at my menu, it’s mostly broccoli or green beans for vegetables so this is a bit of a change. This is what I call my steak and vegetable dinner. Just another sirloin cooked with onions but instead of potatoes I used cauliflower. I sometimes rice it and mash it so it’s hard to tell the difference from potatoes. The fresh corn on the cob was so delicious and this meal cost under $4.00.
Stew Beef
When I can grab a package of stew beef for $2.00, I get creative with dinner. After cooking of the stew beef, I add a package of beef gravy and let it simmer together with the beef until tender. I like to serve this on a bed of egg noodles. I do love my green beans with almonds to finish of the meal.
Omelet
Wait, is this breakfast? Not in our house, I love an omelet for any meal, dinner included. My omelets are always different, I add whatever I have. This one is made with eggs, diced onions, bacon, cheese and broccoli bits. When you get to the bottom a a frozen bag of broccoli florets, it’s usually filled with tiny bits of broccoli. Don’t throw them out! I save them and toss in my omelets! I had left over boiled potatoes so I fried them up to add to my omelet.
Here are a few other omelet creations I’ve made, the first picture has similar ingredients as the above omelet but I topped it with garden fresh tomatoese! The other one I substituted the broccoli bits for spinach! All were delicious!

But today’s UBC suggested blog topic is “This Day in History” so how I can I make that happen with my dinners? I searched through my photos and found that today in history on July 19, 2017 I prepared cubed steak with onions! I told you I take so many pictures and never know when they may be needed!!

PS: USD 3 for a piece of beef? That would be a very small one in Switzerland. 100g Beef Entrecôte is CHF 7.80. What does that mean? 3.5 ounces for USD 7.80, not even an appetizer 😉
I scope out all the meat markdowns Tamara. If I play it right when they put out stickers on, I can grab 4 or 5 meals of steak. Usually the ones marked down to $3 – $4 are at least or very close to a pound. I love being creative with my meals.
My steaks (kosher) are expensive, so they don’t fit your category. But, salmon, tuna (real and in the can), omelets are great quick, reasonably priced meals. I would add quinoa/beans/tomatoes/jalapenos to the mix- for flavor and nutrition (and price).
Actually salmon and tuna are my favorites over steak Roy. I do add a favorite of other ingredients to my omelets, especially tomatoes! I just edited my blog to add a few other omelet pictures.

I love quick and easy meals Amanda! Omelets are great for any meal of the day, we have them more for dinner than breakfast!
