Pork Chops with Roasted Acorn Squash
What’s for dinner you ask? Tonight on the menu, we are having delicious pork chops with roasted acorn squash. I have been hooked on acorn squash and most of the time I bake it by filling the cavity with brown sugar and butter. Here are two different recipes I previously made:

My recipe for dinner will be for pork chops and roasted acorn squash with candied walnut butter. I started by cutting the squash in half lengthwise and scooping out the seeds and strings. Next I cut the squash in 1/2″ slices and spread a small amount of olive oil in the bottom of a baking sheet then arrange the squash in a single layer. Drizzle olive oil over the squash and sprinkle with Parmesan cheese. I roasted this for about 20 minutes at 425 degrees. The last 5 minutes of roasting, I sprinkled more Parmesan cheese over the squash and put under the broiler. Does this smell good!
While the squash was roasting, I prepared the candied walnut butter by added 1 ounce of brown sugar with 2 tablespoons of water over medium high heat, stirring to dissolve then add 1 ounce of small pieces of walnuts. Stir the mixture constantly until the water/sugar mixture has evaporated, about 3 minutes. The walnuts will be sticky as you transfer them to a plate to cool for about 5 minutes. In a small pan or bowl, stir 2 tablespoons of softened butter with the candied walnuts and stir until all blended. You can add some parsley if desired.
Cooking the pork chops are easy, just add a small amount of olive oil and the pork chops to a fry pan and cook until well-browned, about 5 minutes per side.
In about 30 minutes from prep to completion, the acorn squash was ready, the pork chops were ready and topped with the candied walnut butter, the kitchen smelled so good, the meal looked very appetizing and it was so delicious!

I love winter squash – it is zero points on Weight Watchers. So nutritious. Although this would be more caloric, the thought of candied walnut butter sounds so good. Pinned!
