Pop’s Meatballs on Throwback Thursday
Everyone loves Rich’s meatballs! He never told me the secret recipe but I did watch as he would mix everything together. He would mix up a huge pot and make “care packages” for the family.
For one of our granddaughter’s baby shower, Rich made over 200 meatballs and everyone loved them.
Lia loved to help pop roll them and put them in the pan. Talk about Throwback Thursday look how tiny Lia was!
Since I have my daughter and her hubby here from Virginia, granddaughter Alli and her 3 little ones, Alex and Lia plus my grandson from Indiana here I decided to make a pot of meatballs for after the funeral service on Friday. It always took pop three days to make his meatballs. First day he let them simmer after frying them up, second day he leaves in the refrigerator to “marinate” the sauce and meatballs and the third day they go back to simmer. His meatballs were always melt in your mouth.
I made a maiden voyage to Food Lion yesterday and what a surprise when I went to check the ground beef. Each package was slightly over three pounds and I planned to get 3 packages since Rich would cook up about ten pounds when making a large amount.
I had to take a double take when I saw the price marked on the packages…. each one was $1.19! I got almost ten pounds of ground beef for $3.57, that was less than the regular price for one pound!
They were dated today so they weren’t outdated at all. I scurried and grabbed the three packages but I did leave two there for someone else.
I got the ingredients ready, mixed the bread crumbs, egg and secret ingredient and proceeded to cook up the meatballs and then drop them one by one in the bubbly spaghetti sauce.
The meatballs were cooked and simmering in the pan for day one. I ended up with 132 delicious smelling meatballs for Friday after the service. I plan to have a pan of Penne plus a variety of sub rolls so people can decide whether they want Penne or subs! I hope they taste almost like Rich’s and that the family will enjoy them all while thinking of pop.
We are leaning on each other and I’m so blessed to have such a wonderful daughter, grandchildren and great grands to hold me together.

My meatballs were a hit Kebba and most thought they tasted just like Rich’s! My family is great and yes Rich has inspired so many whether it be family, friends and even strangers. He was indeed a wonderful, kind and loving man.

Martha, I’m sure they will be yummy! They look delicious. And what a great deal on the hamburger. I am sure it will be wonderful for everyone to think of his love, in the meatballs. I am so glad for you, too, that you have family there helping you through these days.
