Hi it’s me, Lia! Today is Friday Story Time by Lia and I was so excited the other day when I was saw my carrots from my garden were ready to pick! You may remember when I wrote a blog about planting carrot seeds in March and here it is two months later and I’m picking carrots!

The first picture is when I planted the carrot seeds on February 23rd. Now two months later, I have carrots! You have to be careful picking vegetables and when I started pulling the carrot it seemed stuck. So I rotated it in a circle and then it just popped out of the ground! Look at my first carrot!!!

I was being silly when I showed pop my carrot nose but I was so excited to watch my vegetables grow from tiny seeds!

I washed my carrot and pulled off all the little roots growing on the side of the carrot. Then I carefully cut the leafy tops off plus a little snip at them bottom. My carrot is now ready to eat! I’ll be picking more real soon!

Wait until you read about what we did with the carrot greens I cut off!

Most of you know Ma saves most everything, she even saved my carrot greens! Ma experimented and sauteed them in oil and spices. This is Ma’s recipe: Cut off the part without leaves, then chop the tops in smaller pieces. Add to a frying pan with avocado oil and stir, sprinkling in Cilantro and slivered almonds. It only took a minute to saute them and the greens were so delicious and crunchy!

I’m watching all the other vegetables grow, we have zucchini, yellow squash, eggplant, and peppers. I’ve been picking lots of lettuce for pop, he loves salad and ma makes a BLT sandwich using lettuce instead of bread! I’ll be back soon with more on my garden, hope you enjoyed me picking carrots!

    I never thought to use the greens from carrots. I will have to remember if we get carrots. The wildlife around here usually ends up with everything from our garden.

    I loved your videos Lia…I loved hearing your voice- and just hope my carrots grow like yours in a few weeks!! My garden is growing slowly but surely! Your giving me hope with my garden….although I still need to rototill and plant my pumpkin patch and watermelons and cantaloupes this week. Keep the updates coming, and show us more about working your garden Lia, Ma, and grandma (great grandma)…..
