Our Thanksgiving Day Meal
This is my Friday Story Time by Lia, but wait, it’s not Friday! I have been busy this week helping get our two Christmas trees up, outside decorations done and helping with Thanksgiving dinner. For those who celebrate Thanksgiving, did you have a good day? This is what we had for our Thanksgiving Day meal.
We had ham, turkey, mashed potatoes, scalloped potatoes, candied sweet potatoes, green bean casserole, corn, gravy and honey rolls! Ma was getting baking dishes out for everything but realized she was missing the baking dish she uses for her candied sweet potatoes. After she ask my mommy if she had seen it, we remembered she made a extra dish of lasagna a few weeks ago for her friend. He still had the dish so ma was trying to figure out what else she could use.
As she was looking through the cabinets, I came up with a bright idea! I said, “Ma, I know what you can do! You can use a cupcake pan and put the potatoes in that!” Ma thought that was such a brilliant idea and I ran and pulled the cupcake pan out of the cabinet.
Candied Sweet Potatoes
This is Ma’s recipe for her candied sweet potatoes. She used one large can of sweet potatoes, drained of most of the liquid and poured them in a mixing bowl. I helped her by added about 1/2 cup of dark brown sugar, a little cinnamon and 3 tablespoons of butter. After I mixed all these together with the potatoes, we added about 1/2 cup of drained, crushed pineapple.
I rubbed each section of the cupcake pan with butter and Ma put a marshmallow in the bottom of six of the cups before she poured the candied sweet potato mixture into the pan. She saved a few marshmallows to put on top before baking so we could decide which was better, marshmallow on the bottom or top when all done baking.
Since the ham was in the oven at 275 degrees, we put the cupcake pan with sweet potatoes in the oven with the ham and let them bake about 30 minutes.
Ma love my idea and the potatoes were all bubbley and the marshmallows melted! I don’t like sweet potatoes but I did try a little. Pop and ma loved them and this was a great way to have little individual left-over servings!
While dinner was in the oven, pop and I were relaxing while I was playing one of my games. Everything smelled so good and soon dinner was ready to eat!
Dinner was delicious! When ma was serving the plates she asked me what I wanted and I told her I would like mac ‘n cheese, shrimp and crab! LOL That didn’t happen but she told me I could have that another day, I love shrimp and crab! Oh do you see our Thanksgiving centerpiece? My mommy made that when she was about 8 years old and ma said she puts it on the table every Thanksgiving!
Everyone had a good dinner but we can’t forget dessert! We had chocolate cream pie and my homemade chocolate chip cookies. A great ending to a great day! I hope you enjoyed reading about our Thanksgiving Day meal even though I am a day late for Friday Story Time by Lia!
Hey Lia, thanks for sharing your Thanksgiving dinner with us. Although I never ate pork products, and I’m now a vegetarian, your meal looks delicious. I had a quiet, simple meal with my daughter and enjoyed a lovely day in her company.
I’m glad you enjoyed your Thanksgiving with your daughter Florence. I helped Ma cook and we all had a fun day.
Belated Happy Thanksgiving to you and yours.
I love hearing Lia’s adventures. She’s going to be such a well-rounded young lady. Enjoy!
Thanks Angel, Lia has some cool adventures I must say! Happy belated Thanksgiving to you too!
Lia, this Thanksgiving Day dinner sounds absolutely fabulous! I love the sweet potato cassserolettes (little teeny casseroles)! Now, what are honey rolls? Did I read that right?
Ma loved my suggestion for my sweet potatoes Kebba! Honey rolls are like a dinner roll but has honey added to them. They are store bought but I may have to figure out how to make some!
Glad you had a wonderful Thanksgiving with your family! Excellent idea to make your sweet potatoes in the muffin tray!
Thanks Tamara! I thought Lia’s idea was great!
