One Roast Into Three Dinners

It’s been awhile since I shared my inexpensive but delicious meals and when I saw the great sale that BiLo had on top round roasts, I wanted to show you how I turned one roast into three dinners plus had extras for munching on.

I watch the sales like a hawk and most of the grocery stores have super savings on the weekend.  Last Saturday and Sunday, BiLo had top round roasts, regular price of $6.99 a pound on sale for $2.99 a pound!  Now this is a sale I couldn’t pass up.  I got two great looking roasts, one was about 3 1/2 pounds, regular price would have been $25.44 but with the sale price, I paid $10.88!  The other roast was about 2 1/2 pound, regular priced at $17.20 but with the sale, I paid $7.36.

 

I cooked up the larger roast on Sunday and did it smell delicious while in the oven!  To go with the roast, I prepared steamed broccoli, with a baked potato for hubby and I had rice.

When we got home from work Monday, I sliced up the rest of the roast and we had roast beef sandwiches.  Now I always need to add cheese but I didn’t have any sliced cheese so I added a blend of mozzarella and provolone on my sandwich! This was a quick and easy dinner since we had a busy evening planned.

 

When I have enough meat for multiple meals, I sometimes break it up within the week, but this roast was delicious so for Tuesday, we had another meal from the roast.   Since I had all the beef thinly sliced from the night before, I decided to cook up some egg noodles and heat up the roast beef with gravy.  I added this to the noodles, had a side of broccoli, cauliflower and carrots and it made a delicious, filling meal.   All this meat from a roast that cost $10.88!  The dinners for the past three nights for two meals each cost less than $2.00 per meal!

By watching sales, using grocery loyalty cards and coupons, you can get delicious, healthy meals at a great price like I did on my one roast for three meals.    I’m thinking of slicing the smaller roast into wafer thin slices and make steak sandwiches with peppers and onions!  Stay tuned for that meal!!

      Oh my, I’m a queen Vidya!! LOL I just enjoy saving and passing how I do it to others. There are so many ways to save, it takes time but in the end, it’s worth it! Thanks for stopping by.

      I had a plate ready for you Jeanine! LOL I love stretching meats for multiply meals and by changing the side, each meal was totally different!

  5. See, if you kept kosher, those prices would have been thrice that! Sales do make it easier to purchase the foods we like.

      I can smell out sales Roy! That’s another challenge I go for, trying to save money with sales and coupons. Maybe next UBC, I’ll get brave and do an informational video on my couponing. The challenge is over, but we’ll still be blogging on!
