Not Your Normal Green Bean Casserole

Not Your Normal Green Bean Casserole

Did you ever have your taste buds ready for something only to find you don’t have the ingredients needed to make that special meal?  Well that happened to me the other day when I was getting ready to make a green bean casserole. But when getting my ingredients out of the cupboard, I realized I didn’t have the infamous cream of mushroom soup.  I didn’t even have any cream of chicken soup or sour cream, I was in a bad way. I thought a bit, tried to come up with something else but my taste buds were already set.  That’s when my creative buds took over and I come up with a not your normal green bean casserole.

I started with 1/2 cup of milk, added 1/3 cup of shredded cheddar cheese and 1 tablespoon of butter.  After I mixed it together, I put it in the microwave for about 45 seconds. It came out slightly thicken and smelling delicious!

I used 1 can of French style green beans and added that to a casserole dish, pouring the mixture over the beans.  After mixing that together, I topped them with French fried onions and put it in the oven with 20 minutes left on the roast.

Talk about delicious, it was super delicious and a great new invention for when the cupboard doesn’t have mushroom soup.

As a bonus, I’ll share my quick and easy roast recipe with you.  Most of my readers know I’m always searching for a bargain and that’s just what I got on my London broil. I picked up a roast that was about 1 3/4 pound with the regular price of $16.48 but there was also a “quick sale” $5.00 off coupon on the package so it only cost $11.48!

I put the roast in a roasting pan, sprinkled a package of onion soup mix over it and poured a small amount of water just to moisten the dry mix.  Covering the pan with aluminum foil, it was ready to pop in the oven.  It was ready in about an hour and was so juicy!

Adding mashed potatoes and the green bean casserole made a delicious and filling dinner. Here’s the good part, I had enough for leftovers the following day!
