National Eat Your Vegetables Day
Vegetables are one of the most healthiest foods to eat and it’s been said the more colorful the more healthy. Vegetables can be used as a side dish or a complete meal. I love making a dinner of just fresh vegetables, squash, onions, peppers or broccoli and cauliflower dish. I thought it was fitting to share some of my vegetable dishes with you since today is National Eat Your Vegetables Day.
Did you know that some vegetables are actually fruit? Botanically, fruits contain seeds and come from the flower of a plant, while the rest of the plant is considered a vegetable. In cooking, fruits are considered to be sweet while vegetables are more savory. Two of my favorite vegetables are actually fruit, squash and tomatoes. But I’ll go into “is it a fruit or vegetable” on a later blog. Today I’m sharing some blogs with vegetable (or maybe fruit) meals.
I love broccoli and cauliflower and this is one of my recipes for Baked Broccoli and Cauliflower. I served it with porkchops but it’s actually a meal in itself and meat is optional. For leftovers I eat just the casserole.
This is a quick and easy Cauliflower and Squash recipe. After mixing all the ingredients together I cook it in a frying pan instead of baking in the oven. All I can say is it’s delicious!
When it’s too hot to cook I have a variety of some Delicious Dinner Salads for you to try. The first salad is broccoli and cauliflower with dried cranberries, slivered almonds, hard boiled eggs, bacon and cheese. The best part is my homemade raspberry vinaigrette salad dressing which Lia helped me make! Another salad is cauliflower with tomatoes and salmon! You won’t want to miss this recipe!
My hubby loves stuffed peppers but there are times when I just have small ones from the garden. So I came up with a Stuffed Pepper Casserole. I made the stuffing of rice, ground beef and sauce, layer it in a baking dish and arranged cut pepper pieces around it, baking for about 30 minutes. This is another quick, easy and delicious vegetable dinner.
So what are you having today for National Eat Your Vegetables Day? I love vegetables and some are great for a snack, some for a meal or some for both with leftovers! I’m leaving you with two snacks, one is my BLT without bread. Take a large leaf of lettuce, add mayo to the leaf, top with bacon and tomato and wrap the lettuce around it for a yummy snack. My other snack is take a soft floured tortilla, cover half with tuna (chicken or salmon are great alternatives too) layer lettuce and tomato on the other half and flap in half. Both of these are also good with cheese and they make great pick-me-up snacks!

Great article. Your hamburger/lettuce wrap is well known to those of us on a ketogenic longevity diet. It can be found in almost all keto cookbooks, some add a couple of slices of bacon, some add a slice of their favorite cheese. But in our case, they serve as a complete meal. We cook and make salads in our house with broccoli and cauliflower often. We do not need a special day for vegetables as they are a part of all our meals. I enjoy a half of an avocado with about 90% of my meals, missing only when I forget to have any on hand. That is not often as we have two avocado trees.

I had a burrito with corn and lettuce and onions as my veggies today. Lia is so helpful in the kitchen. My daughter will help with one step and then she’s gone! LOL My son will only help with foods he likes — muffins or cookies! Thanks for sharing!

My mother also loved to make dinner for herself that was just vegetables, and when she cooked for us, we always had vegetables with our meals. I didn’t know it was National Eat Your Vegetables Day. I’m trying to remember the last time I ate one. It was potato soup, probably! Or broccoli and cheese soup.
We eat more vegetables than anything Jeanine! Sometimes just a salad and corn on the cob is enough dinner for us. I love broccoli and cheese soup, yummm!
I love veggies, however I don’t eat them enough. I got to work on that.
