My Liver Take Two

BENEFITS OF EATING BEEF LIVER I shared one of the recipes I use in that blog and since I’ve had requests for the other way I prepare it, I’m sharing My Liver Take Two. Both are so delicious and quick and easy to prepare. The one thing you have to do when preparing liver, is cook it quick unless you like to eat shoe leather.
This is my recipe for cooking liver coated with flour. I start out by browning sliced onions then cook up some bacon. I always make more bacon than needed since I eat a few pieces while the liver is cooking. LOL While the bacon is draining on a paper towel, I start preparing the liver to cook up.
I add flour to a dish and lightly coat each piece of liver. I leave some of the bacon grease in the pan and fry the liver in that. Brown one side, then flip and brown the other side of the liver pieces until done. It only takes a few minutes on each side for the liver to fully cook, any longer you end up with dried out liver that is like shoe leather.
Top the liver with the fried bacon slices and onions for a delicious, juicy and healthy meal full of protein, vitamins and minerals. To finish the meal, I added left over oven baked potatoes. Four pieces of liver cost about $3.00 and that makes two meals. So for about $2.00, including the potatoes, I had a very economical meal.
To the best of my recollection, my liver take two is how my grandmother would make liver when I was a young girl. I have always loved the smell and taste of all kinds of liver, but beef liver is my favorite. There are some people who don’t like liver, is that you and if so, why don’t you like it?

That distinctive flavor…I haaated liver as a child but like it as an adult. Should probably mention that my mother never cooked liver. I was introduced to it by a great-aunt who organized an urban mission funded by a thrift store when she was 55, was given a 40-year jubilee a few years ago, and if she’s left to her own devices will still spend her days helping out in the store.

My mom use to make it when I was a kid. I don’t remember trying it. My ex-stepdad loved liver.
There are so many health benefits to liver Sandy but many people can’t stand it. LOL
