Alexandra made two large pans of lasagna, one was for her friend and other for our Wednesday dinner. Of course I had to have left overs the following day because it’s seems so much better the second day! But what do we do the the leftover after a few days of dinners?

I cut the left over lasagna in serving sizes and freeze them in individual servings. I usually put them in individual containers for meal prep but since I was out of small containers I used larger freezer containers and placed the individual meals in them but left space between each piece. I froze them and now when we want a lasagna dinner, all we have to do is take out how many single servings we need.

I had one serving today for lunch and after it’s heated up the lasagna is so mouth watering delicious! I love doing meal prep, it saves time because once a large pan is made, we have left overs for many meals. It’s also a cost saving because when we by ground beet, we get a large amount for less money. I purchased five pounds but only used about three pounds. The left over beef was made into individual patties and frozen. I now have 9 servings of lasagna and 9 ground beef patties. This is great when we need a quick meal or I don’t have a clue what to make, I just pull out a meal prep and dinner is served!

    We’re not much on leftovers except for pasta dishes. I 100% agree, they always taste better the next day. Lasagna and spaghetti are dishes that we end up freezing (individual containers) for fast lunches. Alexandra’s lasagna looks super yummy. I’m sure you all enjoyed it.

  3. Martha, how I love lasagna! And are those cream cheese crescent rolls there? Like Alexandra, more and more, I cook without thinking about it or using a recipe. And I do refrigerate or even freeze portions as you have done. Yumm! More lasagna later!

      I find the next day is always better Jaime! I took a portion out of the freezer the other day, added some sauce over the top with shredded cheese. Baked it until the cheese was bubbley and was that delicious!
