Lia’s Zucchini Bread
Lia’s Zucchini Bread was delicious! I have made cakes, cookies, salads and sandwiches but first time for bread. Read how I picked the zucchini and made two loaves of delicious bread for Friday Story Time by Lia.
I was so excited to watch the squash grow bigger and bigger in my little vegetable garden. The other day a zucchini was big enough to pick! I tugged and tugged on it but was hard to do with just one hand. I was carrying a popcorn kernel for the birds in my other hand so I handed that to GGmama to hold. Once I got two hands on the zucchini I pulled it right off the vine! I headed into the kitchen to make some zucchini bread.
The first thing I did after washing the squash was to watch GGmama cut it in little pieces. We needed 2 cups and there was enough from half of the zucchini to get that much so I have another half to make more bread!
So the zucchini is all cut in pieces, I helped mama chop the pecans (the recipe said to use walnuts be we didn’t have any) and all the ingredients are ready to make my bread!
This is the first time in didn’t use the mixer, I used a big wooden spoon and stirred and stirred everything together. First I mixed the wet ingredients then I added the dry ones. We added a surprise at the end, we tossed in some mini chocolate chips. It was fun spinning the spoon round and round.
WHEW, it’s all mixed up and ready to pour into the baking pans. The bowl was so heavy mama needed to help hold it so I scrape the batter out. Doesn’t this look good even before it’s in the oven?
You probably already guessed what I was going to do while the zucchini bread was baking. Yup, I was licking the batter off the spoon! It was YUMMY!!
I had to wait almost an hour for my bread to bake but it smelled so good. When it was finished baking mama took it out of the oven to cool, it was so good warm with butter!

Thank you from Lia, I’m so happy she enjoys learning while we’re having fun. She’s doing the same thing her mommy did with me when she was Lia’s age! It would be great to start memory making with Caiden, you can start in a few months, they grow so fast Nancy!

I’ve never made zucchini bread and Lia makes it at 21 months old! LOL It was delicious and yes, so much fun to make Brenda. Lia loves baking.
