Lia’s Peanut Butter Fudge
No it’s not Friday Story Time by Lia but the UBC blog topic is to share a behind the scene photo tour so I’m going to show you how I made Lia’s Peanut Butter Fudge this morning!
This recipe is so easy, I have all my ingredients ready – sugar, milk, peanut butter and vanilla. Here we go, ready to make peanut butter fudge! The sugar container was almost empty so first I had to refill it. The bag was heavy but carefully I poured it in the container and I didn’t even spill any!
I added the milk and sugar in a pan and then it had to boil for 2 1/2 minutes, stirring the bubbles. I had to be very careful because the stove burner was very hot. I used my wooden spoon so that didn’t get hot.
After it was done boiling mama took it off the hot burner for me and I added the vanilla and peanut butter. I had to mix that all together quickly so it would get blended together.
The fudge is ready to pour in the pan! After I patted it flat I put it in the refrigerator to let it harden.
We all know what’s next after baking, it’s clean up time! While I was waiting for the fudge to harden, I cleaned everything up and did the dishes.
My peanut butter fudge is ready for mama cut it it pieces! I gave pop one to try and he said it was the best peanut butter fudge he has had!

She was so happy to meet me and look what she gave me for my butterfly garden! Ms. Jean heard I love butterflies and gardening so she passed down a garden butterfly ornament that she has had for a long time. It has beautiful colored beads around the edge and swirls around in the wind. I’ll take good care of my new garden ornament from Ms. Jean!

Here is the recipe I used:
2 cups sugar
1/2 cup milk
1 teaspoon vanilla
3/4 cup peanut butter
Bring sugar and milk to a boil for 2 1/2 minutes. Remove from heat and stir in the peanut butter and vanilla. Pour it in a greased 8″ x 8″ pan (I used butter) and refrigerate until hardened. Cut in chunks and eat!

Martha, I love how you are teaching her to bake! I so wish my mom had gotten me in the kitchen when I was little. Looks like it is so much fun.
Lia is so willing to learn just about anything Jeanine. I love how she has to clean up and do the dishes all by herself after baking!
sugar, milk, peanut butter and vanilla….Oh my! Well to make it a vegan version- I wonder if I can change the milk to coconut milk?!?!? Do you think it would make it a bit more creamy as well? (canned coconut milk- also alot more fattening- no?!?!?….But sweet…..hhmmmm….and he refined white sugar? All I use is coconut or date sugar…..hhmmm…..always looking for substitutions…..not to change what looks delicious but my more animal friendly and diabetic friendly substitutions!
I’d say give it a try Pam! If you don’t try you will never know! My motto is “If you want to explore deeper oceans, you have to leave sight of the shore!” Go for it and let Lia and me know!
Wow, I think I will need to move across the street from Lia. Are there any more houses available within walking distance of Lia’s kitchen? Maybe she should make a little cookbook that she could put for sale on the side of your blog. With recipes like this, I am sure everyone would want a copy.
WOW, that’s a great idea Chef William! She has Lia’s Sunshine Studio for her art but I like Sunshine works with everything so cookbooks could work! I’ll keep watch on houses. LOL

Oh adding peanuts would be a great idea Kebba! Of course if I asked Lia she would say add sprinkles or MM’s as those are her favorite toppings. LOL it’s such an easy recipe and so creamy.

Fudge is my favorite and you make just like my mother did. Your smile is so bright and beautiful it needs to be on a postcard. I would buy her cookbook.
