Lia’s Lemon Zucchini Bread
You guessed it, it’s Friday Story Time by Lia and do I have a delicious story for you today. Some of you may remember reading about Lia’s Zucchini Bread about a month ago, well today I’m sharing Lia’s Lemon Zucchini Bread with you! This one is super delicious recipe!
When I made my first batch of zucchini bread, I didn’t have a chopper so GGmama had to slice the zucchini in very fine slices. It took her a long time! But a few days later we received a gift of an Oster mini chopper! Wow did that make it easier to chop up the zucchini! You can see from the above photos how the first one is larger pieces of zucchini and the next one is nicely chopped evenly. Both tasted delicious but the Oster chopper sure made it easier and quicker to chop. This is my blog about my Little Oster Chopper and how easy it is to use.
Lemon Zucchini Bread
Okay so what you’ve all been waiting for….. the recipe for my lemon zucchini bread! First I beat the eggs then added oil and sugar and mixed them all together. I added the lemon juice and buttermilk into that and mixed again until well blended. Next I added the chopped up zucchini and mixed some more! Now if you look at the middle picture you won’t see any buttermilk. Hmmmm that’s because we didn’t have any! So mama did the next best thing and substituted the buttermilk with plain yogurt and water. Here is how she did that: 3/4 cup of yogurt and 1/4 cup of water makes a cup of buttermilk substitute. The recipe called for 1/2 cup so mama cut the amounts in half.
The next ingredients to go in the mixture was the flour and baking powder. It calls for salt be we don’t use salt . The batter was thick and took some time to mix it all up but I got it!
The recipe didn’t call for nuts but we had so much fun trying out the new chopper we also chopped some pecans and tossed about 1/4 cup into the batter. Carefully I mixed the nuts in until they were evenly mixed with all the ingredients.
When I poured the batter in the 9″x5″ pan I had a little extra so I made some butterfly shaped zucchini muffins!
This next part is what takes so long! I have to wait almost an hour until I see how my bread will turn out! But mama says it teaches me patience. The muffins only took about 20 minutes so we sampled them while the loaf of bread was baking.

GGmama was looking online for the perfect recipe and that’s where she found this one. It’s from Lil’ Luna and there are many great recipes that I’ll have to try next! Here is her Lemon Zucchini Bread. It has a glaze that can be added but it’s delicious without it too!
Both the zucchini breads I made were delicious and each had their own taste. But if you like lemon you’ll LOVE this one!

Great substitute for buttermilk!
I never had buttermilk on hand Roy plus using the yogurt make the bread deliciously moist.
