Left Overs Seem To Taste Better

Have you noticed how left overs taste better than the day dinner was made?  I have two delicious left over dinners to share with you.

The first was a roast I got with extra coupons on package to use at checkout.  The almost 4 pound roast cost under $5.00 and was it delicious!  I prepared the roast in the oven, at 300 degrees for about 3 1/2 hours. It was so tender and juicy.  We had the roast, baked potatoes and corn.  I sliced the left over into thin slices and added the juice from the pan in with the meat slices.  The next day, this was dinner and was even more delicious than the first day.

The meat was a melt in your mouth dinner, served with brown rice and carrots.   So total spend on the two nights dinners for hubby and me was less than $8.00.  That’s $2.00 per meal for a healthy and filling dinner.

I had also snagged up a package of boneless top sirloin steak for $4.68 after all my deals and register coupons. There was enough steak in the package that would be enough for two meals.

While the steaks were grilling, I picked a few miniature peppers from our garden and sauteed them with onions to top over the steak.

I especially like how one of the steaks was in the shape of a heart. Peppers and onions are a meal alone so that and the steaks were enough to fill our tummies.

I sliced up the left over steak and the next night I made steak sandwiches on hot dog rolls!  Both these meals were cost a total of $5.00 for the two of us.  I can’t even buy a fast food meal for $1.25!

For around $13.00,  hubby and I had four nights of mouth water, scrumptious, inexpensive and healthy meals.  I love scoping out the meat counter for deals.  Does your supermarket have sales on meats or extra off coupons? Usually when I see these deals, I snag them up!

    Those are yummy and cost savings meal. I love seeing how far I can stretch a dollar in creating meals for my family. At times it can challenging. But I look at it as a game I must win. That way it brings me joy and not stress.

      That’s how it is with me too Sandy, it’s like a game to see how far the meat will stretch. It reminds for of a toy my kids had when they were younger, Stretch Armstrong. LOL The meals were delicious plus healthy along with a great savings. I love doing this kind of challenge! Thanks for stopping by.

      We think alike Alex, good meals at a low price. (Pop doesn’t like cheap) LOL Wait until you read my Meal for 2 with 1 burger! That’s coming soon.
