Last of the Eggplant

I have a delicious Friday Story Time by Lia today! You all know I love gardening and I grew so many vegetables in my garden this summer. I helped ma freeze squash and peppers and fry up eggplant to freeze. Usually the vegetables are done growing by August because it’s so hot in South Carolina. But this summer after we picked the last of our eggplant I wanted to keep one of the plants because it was so huge! Pop turned our vegetable garden into a pinwheel garden and we had 2 pepper plants and the eggplant plant still growing.

A few weeks later I noticed a few baby eggplants and some purple peppers growing! I picked two purple peppers a few weeks ago and yesterday I picked two big eggplants! There were three on the plant but some little critter started munching on one so we let him finish that one.

After I picked the two large eggplants I noticed another tiny one growing! Maybe we’ll have more eggplant to fry up soon!

I washed the eggplants then ma and I cut them in slices so I could dip them in eggs and flour. I’m very careful when ma and I cut the slices, I have to go very slow to get even slices.

Look at all the fun I had whisking the eggs then dipping the eggplant in the eggs, flour and eggs again.

Look how delicious the eggplant looks when it’s frying! The kitchen smelled so good and when it was finished frying we drained the slices on paper towels. Yes I made a little mess but I got the job done.

We were waiting for the fried eggplant to cool so ma could freeze them but she started eating them like cookies! Ma loves to eat eggplant like that, hot out of the pan and also eggplant parmesan. I think she saved enough “cookies” to make some of her delicious eggplant parmesan soon. Look the mess is even cleaned up!

I love to cook and bake with ma plus do gardening with pop. I’m glad I was able to fry up the last of the eggplant, now we will have them in the freezer for when ma wants some eggplant parmesan!

    those fried eggplant sure look yum, Lia!! i definitely need to learn the secret of both how to grow them and to cook this delish recipe
