Indiana Salmon Dinner
Since we rented a small apartment instead of staying in a hotel when we went to Indiana, we were able to cook good meals and not have to eat out every day. Zac, Taco and I love salmon so I told them I would make a salmon dinner when Alex and Lia went visiting.
I packed everything from home that I needed to prepare the dinner except we bought fresh salmon on the day I was making our dinner. Zac is just like me, it has to be wild caught Sockeye salmon from the United States.
I started by browning the salmon in butter and avocado oil, skin side down and flipped it over when it was crispy to cook the other side. I drizzled lemon butter sauce over the top when cooking and then was ready to add my rice and green beans. Since we only had one frying pan for my one pan wonder, I took two of the salmon filets out so I had room to sauté the green beans with slivered almonds and cranberries. Next I added the cooked rice so the salmon juices could blend together with the rice and green beans. When everything was ready, I added the other salmon pieces back in the pan and drizzled them with more lemon butter sauce. HOW I MAKE MY LEMON BUTTER SAUCE: I melt a tablespoon of cut-up butter at a time but only part way so it will be “chunky” then add another tablespoon if needed. Then I squeeze in lemon to taste. The sauce will be thicker if you only melt it partial then mix the lemon and butter together. The amount of butter you use will depend on how much salmon you are cooking.
Dinner was ready and I even made crescent rolls, served them with cinnamon butter. The salmon was smothered in the lemon butter and so good! I did receive a bonus with my meal, neither Zac nor Taco eat the salmon skin so I get to have it all!
Everyone agreed that dinner was delicious but next time Zac and I are together we are having a salmon cook-off! He makes his with different spices so we will see who wins the salmon taste test. Will it be Zac or will it me me? Since Lia also likes salmon maybe we should let her be the judge! Oh and we did save her some of the dinner.
Of course dinner would not be complete without dessert so I made chocolate chip cookies while we ate dinner. Nothing better than warm cookies and I even turned them into sandwich cookies by filling them with whipped cream! So what do you think of our salmon dinner?
Longhorn’s Steakhouse
Speaking of delicious meals, the day we arrived we went to Longhorn’s Steakhouse and we had so much food! Lia and I love their multi grain bread and the waitress was so nice. When Lia asked for more bread, the waitress asked if she wanted it with dinner (which as almost gone) or take it home with her. As Lia was thinking, I said “take it home” and Lia said “have it now” so the waitress brought two loaves! Dinner was delicious and the waitress was super, she even took our picture! Oh and if you wondered where I got the cinnamon butter for our salmon dinner, I got it from Longhorn! I ordered a sweet potato topped with butter and cinnamon and I took the left over home with us!
I always love your posts about salmon, it loos so delicious! The cookout will be fun, and judging will probably be super hard, but I trust Lia.
Good to hear that there’s waiters out there who get it. If some bread will make a customer happy, give it to them! Now the entire blogger community knows and goes out for dinner at Longhorn! God knows I would love to!
We have a Longhorn a few miles from our house but we’ve never had dinner there! Usually Rich and I would go for a late lunch and have their salad and thin cut steak sandwich. But now I’m ready for another dinner, the portions were huge and friendly service is always a plus. Thanks for stopping by Tamara!

The amount of butter you use will depend on how much salmon you are cooking. You can use fresh lemons 100% real lemon juice in a bottle on hand. As for the almonds and cranberries, I toss them in so many of my vegetable dishes plus salads and rice meals. I also cook mostly with butter and avocado oil. I told them I’m going to open a food truck and that’s when Taco said it needs to be called the One Pan Wonder meals since everything is cooked in one frying pan. LOL Let me know if you start added almonds and cranberries to your dishes. I use the dried berries.
Salmon while traveling? What a great, healthy meal that sure beats fast food. We rent Airbnbs all the time and even rent vehicles through an app. We get to meet lots of people all over the country, and it sure beats the cold hotel room. But salmon? I have never thought to make that on the road. Kudos to you. I look forward to your next post!
I’m hooked on Airbnb now Kristine! We had a small one bedroom apartment and it even allowed dogs so we could take our pup! The sofa made into a double bed so my great granddaughter and I grabbed that to be closer to the kitchen to raid it for midnight snacks. LOL I like it because we can bring or buy food when we get to where we are going and eat healthy. Salmon is my favorite meal.
