Halloween Treats
Today is the last Friday Story Time by Lia for October! This was a quick month between having my Lia’s Sunshine Bakery Alzheimer’s bake sale fundraiser and then going to Indiana to visit Uncle Zac! Since next week is Halloween I want to share with you a few yummy Halloween treats you might want to make.
Before I share my Halloween treats I want to show you my new measuring cups and spoon sets that Ma surprised me with. I have a few plastic sets but none as pretty as these gold ones with white handles. They are a great addition to all my baking utensils.
Toe Nail Brownies
Look at my toenail brownies! I made these for my Alzheimer’s Fundraiser bake sale a few weeks ago and everyone loved them.
Ma found the Coconut Chips at the Burlington Coat Factory of all places. As I was putting the brownie batter in the mini cupcake pan, Ma brought out the coconut chips and we put them on top of the batter. When Ma took them out of the oven she laughed and said they looked like toenails so that’s where they got the name Toenail brownies from.
Apple Donuts
The other day I was reading some blogs with Ma and our blogger friend Tamara shared an apple cake recipe with only two ingredients. I haven’t made it yet but sounds so good! I also have a recipe using only two ingredients, it’s for apple donuts!
Here is the recipe:
1 1/4 cup self-rising flour
2/3 cups of applesauce (room temperature)
Mix the ingredients together and using a cookie scoop or spoon, drop the dough gently in a saucepan that has hot oil heated to medium heat. (But be very careful because if you drop them too hard, the oil will splatter and it may burn you. This is the part that Ma helps me with.) If they stick to the bottom of the pan, careful put a spoon or spatula under it to loosen it. As the donuts cook, they will float to the top of the pan (don’t overfill the pan, they need room to float) and usually flip over by themselves but you may have to help some turn over.
When the donuts are golden brown, carefully remove them from the oil an let them drain on a plate with a paper towel over it.
When they are cool enough to touch, roll them in cinnamon and sugar or leave them plain. If by chance you have any leftover, it’s better to store them in a paper bag, if you put them in a container with a tight lid or plastic storage bag the coating soaks into the donut and they get a bit sticky. But we never have to worry about that because the recipe only makes about 12 donuts and we eat them all right away!
These apple donuts are so delicious and even better if eaten warm right after they cool. Of course Ma and I add a cup of hot cocoa topped with whipped cream and my sunshine sprinkles.
Both these recipes are fun and easy to make and good Halloween treats or for anytime you want a sweet treat! The donuts only take about 30 minutes from mixing to frying to eating!

Our family doesn’t use whear flour, because it makes us sick – but my grandkids still love to make using floor from other seeds and brains (and coconut!!)
Yesterday my granddaughter Keira and her friend made yummy brownies, and the maple bars from our favorite gluten free bakery ate the best one had in years!

It’s so great that we have so many alternatives for baking now Nadya. A few of my great grandbabies are allergic to eggs so I can substitute them with applesauce or yogurt!
Lia, you as a butterfly is absolutely perfect! And what a great recipe. Those are the kind I like, the ones with only 2-3 ingredients, and one or two things to do. But I bet I would like them even more if I used cinnamon applesauce!!
