Green Beans and Almonds
We went to Costco the other day and filled our freezer and pantry! I’ll have more on my great meat deals another time but I have to tell you about the green beans and almonds I bought.
I picked up a 5 pound bag of frozen Organic Green Beans for $7.99 and a 2 pound bag of sliced almonds for $7.39. I use the almonds in my homemade trail mix, cookie recipes and cooking.
Did you know that one cup of raw green beans has only 31 calories and hardly any fat? There is only 3.6 grams of sugar, no cholesterol and low in sodium. They have 2.7 grams of fiber in raw beans and 4.0 grams in cooked beans. Raw grean beans are also loaded with a good source of vitamins and minerals. I prefare fresh/frozen vegetables because they don’t have added ingredients. A cup of undrained canned beans has 461 mg of sodium so it’s best to rinse them before eating. I cook without salt and hardly use any on my cooked foods.
As for almonds, the are a popular tree nut which can be eaten whole with the shell removed or sliced very thin, the way I use them mostly. But I do love the grab a handful of shelled almonds and eat them with the skin on as a snack. Almonds are high in healthy monounsaturated fats, fiber, protein and other nutrients.
Simple but delicious green beans and almonds recipes
For yesterday’s dinner I sauteed the green beans in avocado oil and butter. After they were almost done, I tossed in a handful of the slivered almonds. It took less than 5 minutes to perpare this delicious vegetable side. The sirlion steak from Costco was melt in your mouth and I’ll be sharing that recipe another day.
But it was Tuesday’s meal that was totally awesome! I got a package of shrimp at Costco for Monday’s dinner, there were 5 left so Tuesday I prepared them for me since everyone else had something different. Not knowing what I would have with the shrimp, I decided to have the green beans. I sauteed 5 shrimp then added some fresh/frozen green beans. The next part was Lia’s addition! She grabbed the slivered almonds and some dried cranberries from the cupboard. Then she added them to the beans. Next Lia ran to the fridge and tossed in a handful shredded cheese blend. Not sure where she gets her ideas from but her green bean creation was delicious!
We’ll have many meals with five pounds of green beans so if you have any delicious recipes, Lia and I will be ready to try them!

Nice! I’ve been looking for new veggie recipes that I can easily prepare. We are on a diet plan that requires a serving of veggies each meal. Can I substitute french beans?
Yes, french beans would work but I prefer to use fresh or frozen instead of canned. I use to always use french style until I found the huge bag at Costco. They are tiny green beans so almost like french style Bing!
I love shopping at Costco. But I have to guard against buying more than I can eat or safely store.
Yes that’s the one thing we have to do also Kate. It takes planning to shop there and figure the best ways to store them.

Sounds delicious and very similar to what I do with sauteeing green beans and almonds–yummm! And my Costco is just up the block!
We have the same tastes in many things Kebba! I use to boil my frozen vegetables, now I’m hooked on sauteing them.
