Gotta Have Words on Wordless Wednesday
Well today is the last Wednesday of the month, seems like it went by fairly fast! But this week I gotta have words on Wordless Wednesday. I was so excited when I got my mini cast iron baking dish and it even came with a wood trivet.
Hobby Lobby has all their Christmas items half price and this was one of them! It was regular $14.00 but at $7.00 I thought it was a steal and I couldn’t get home quick enough to make an omelette in my mini pan.
I got all of my ingredients ready, 2 eggs, diced ham, cut up broccoli florets, diced onions and shredded cheese. I mixed everything together except the cheddar cheese then added a splash of milk and some dried cranberries.
My omelette mixture fit perfectly in the cast iron baking dish and I baked it at 350 degrees for 30 minutes. The last 5 minutes I added the cheddar cheese to the top and let it melt.
I was so hungry that I started eating my omelette right out of the baking dish and forgot to take a picture on a plate. So I grab my loon plate and put the omelette over his body with just his head sticking out. Okay so I like to play with my food. LOL
My omelette was so good with the mozzarella cheese baked inside and the cheddar cheese melted on top. Eggs, ham, broccoli, cranberries and cheese sounds like a fairly healthy breakfast or lunch and it was filling and delicious! I hope you enjoyed my gotta have words on Wordless Wednesday!
This pan looks cute and versatile, and also more handy to wash than a regular one. Oh the delicious meals you and Lia are going to prepare with it!
And the price was right Tamara! I love it for making single omelettes and even a small cake!

That looks exquisite! I’ve never baked an omelette, but it’s probably because I don’t have an oven safe pan. Your omelette looked delicious. I’d never thought of adding dried cranberries to my omelettes, but I’m certainly willing to give it a try!
I love adding unusual ingredients to my recipes Alice. I also add cranberries to my sauteed vegetables, especially green beans or broccoli and even toss in slivered almonds. The cranberries give it a great flavor. You can also cook an omelette on the stove top, just have to flip it carefully or it flops. LOL But still tastes good.
