Fruit Cookies from Lia’s Sunshine Bakery

Look at the fruit cookies from Lia’s Sunshine Bakery I made. I even came up with my own recipe! I got everything I needed out of the cupboard then told ma I was ready to make cookies. I got out a bag of dried mixed fruit, a bag of cranberries, the flour, sugar, baking soda and egg. Of course I had to get the sprinkles for my recipe too!

The first ingredients I put in the bowl were the dried mixed fruit and cranberries. Ma came over while I was adding the sugar and asked me how much I was using, I told her I put in 9 cups. Ma’s eyes opened real wide when I told her 9 cups of sugar but when I showed her how I was measuring using a tablespoon instead of a measuring cup she relaxed!

Next I filled the one cup measuring cup with flour plus a teaspoon of baking soda and mixed it with the fruit and sugar. One egg was next to go in the bowl. Carefully I mixed everything together. The mix was dry so I added some milk. I don’t remember how much but ma guessed it was about 1/4 cup.

Of course everything I bake has to have sprinkles added! When I add sprinkles it’s like adding a little sunshine in my cookie batter!

I decided to add some coconut so I dumped part of the bag in the batter, I think I used 1/4 cup. The batter was a little thin and needed something to thicken it up so ma and I looked through the cupboard and she suggested adding oatmeal. That did it, the batter was perfect to drop into cookies!

The ingredients are all mixed up and ready to drop on the cookie pan but first I have to add a few more sprinkles! I baked them in the over for 8 minutes at 350 degrees.

Look at the fruit cookies from Lia’s Sunshine Bakery! I came up with the recipe and made the cookies all by myself! I even added five M&M’s to the batter so who ever got those cookies had an added surprise! The cookies were delicious and so soft! I want to come up with another cookie recipe soon! A FEW WORDS FROM MA: I just wanted to let Lia know how proud I am of everything she does and all her accomplishments. This is the first time she has pulled the ingredients out of the cupboard and made her very own cookie recipe and I was amazed on how well they turned out! Maybe someday there will be a real Lia’s Sunshine Bakery!

  1. Interesting concoction. Did the M&Ms add to or detract from the flavor?

      The cookies were delicious Roy! Lia only put 4 M&M’s in the entire batter so the lucky ones got those. Lia was the lucky one but I did try one and I didn’t really notice the taste since the fruit over powered the chocolate.

      Lia is something else Brenda! She pulls ingredients out of the cupboard and turns them into cookies! These were delicious and I’m working on the amounts so I can write up a better recipe! The fruit was delicious!
