From Garden to Tummy

There is nothing more delicious than fresh picked vegetables from garden to tummy! With hot weather over 100 degrees and 18 days without rain, our garden isn’t growing as quickly as in the past. But they other day, I picked a pepper, 2 summer squash and the tiny bit of leftover leaf lettuce. Since our eggplant needs a bit longer growing time, we stopped at our local North Myrtle Beach Farmer’s Market and picked up an eggplant along with a few other yummy vegetables.

I knew I didn’t have time to make Eggplant Parmesan so instead of cut the eggplant in slices, dipped in flour then egg and fried the slices up. After it cooled, I put it in a freezer bag until I was ready to use it. However, it all didn’t make it to the freezer, I love eating the eggplant “cookies” as soon as they have cooled slightly!

The next day I made the most delicious Eggplant Parmesan with the slices I had already prepared. It’s very easy to make, I add a small amount of sauce to the bottom of the baking dish, layer the eggplant and add more sauce then cover with mozzarella cheese. Add another layer of eggplant followed by the sauce and cheese again. I tend to get carried away with the top layer of cheese, I’m a cheese-a-holic! Since the eggplant was already prepared, I mostly had to just eat it enough to have the sauce bubbly and the cheese melted. Since hubby doesn’t eat cheese, I made a small dish with just sauce.

I usually add a side of spaghetti but this time I just had a large piece of Eggplant Parmesan with a side of broccoli and cauliflower and that was filling enough! Just another easy, quick and delicious dinner!

      I love to cook and bake but the number one thing on preparing meals is they have to be quick and easy Nyxie. I can plan a healthy meal for hubby and I for under $5.00, I love a challenge of eating healthy and saving money at the same time.

      That’s what I like about eggplant Adrienne, it’s meatless but it’s also a very filling meal. I have been experimenting with recipes with cauliflower, I recently made cauliflower cheesy breadsticks. Delicious! Thanks for stopping by.

      There’s nothing more delicious than fresh picked vegetables Britt! We don’t have as many as usually, we had over 100 degree temperatures and no rain for over 2 weeks. Let me know when you start your harvesting!

      Oh Jeanine, you have that right, it tastes so fresh and we don’t use any chemicals so it’s pure, fresh vegetables! I like be able to stock up the freezer for the winter Jeanine, fresh year round.
