Friday Baking Day by Lia
Today is Friday Story Time by Lia and you know I love to bake! Mama had three bananas that were perfect for making banana bread so I got my chair ready, grabbed my new apron and chef hat and got busy making banana bread for my Friday baking day by Lia.
I’ve made banana bread before and each time I try a different recipe. This recipe called for 2 1/3 cups of bananas but when I mashed them I didn’t have enough. So mama came up with the idea of adding apple sauce.
After I added the butter, eggs, brown sugar and bananas, I put in 1/3 cup of applesauce to make up for the missing bananas. Then I added the flour and baking soda and watched as the mixer mixed everything together.
The recipe didn’t call for pecans but I love to chop them so I picked the whole pecans from the container of chopped ones and put them in my little chopper and watched them chop in tiny pieces to add to the batter.
Everything is mixed up and now it’s time to pour into the baking pan. Of course as soon as I scrapped all the batter into the pan, I had to do a taste test! Oh and do you see the baking pan? That was my great, great, great grandmother’s pan that mama still has.
I got a double licking after the bread was in the oven! One from the beater and the other from the spatula!
So now I have to wait a LONG time until the banana bread is done! It takes an hour so I’ll have to just make some funny faces for you! When mama took the bread out of the oven it smelled so go! Doesn’t my banana bread look delicious?
The next thing I did was give it a visual look. It sure looked the right texture, now for the taste test. Oh my, my banana bread is delicious! I didn’t taste the applesauce but I think that’s what helped made the bread moist. Do you like banana bread? Lia and I love baking and doing projects together Cindy. So many memories I hope she will remember and I think I’ll give her all the “old” baking pans from my grandmother when it’s time for me to end my baking.

Oh yes, I always have softened butter on hand Jeanine! I also sprinkle the butter with cinnamon and sugar too!
Lia and Martha, this banana bread does look delicious! I have run up against the same thing– bananas too small for the recipe– so I added applesauce. And one time I used plain yogurt. Very moist. Banana bread toast with cream cheese is yummy, too, so keep that in mind. Maybe sprinkled with cinnamon sugar.
Yes, we’ve used yogurt also, delicious! I sprinkle cinnamon sugar over the butter Kebba. But cream cheese sounds delicious!

Oh, I’ve got to try this recipe when I get some really ripe bananas! It looks delicious! The recipe was wonderful and the pictures of Lia are pure delight. I love her enthusiasm for baking. This little kid is shining!!!
This is one of our favorite banana bread recipes and by adding the applesauce it’s even better Alice. Lia loves baking and it’s so cute how she pushes the chair from the table that she uses for baking every time I mention a egg. She LOL She is such a joy for sure.
So I have an embarrassing admission to make, I’ve never had banana bread. Like ever. Not once. Not sure why, I guess it’s not a thing in my family, and I never had the curiosity to try it myself. But this post sure does peak my curiosity. It is time!
That was me with zucchini bread Michael. I never even had the desire to make it until we grew zucchini in our garden. Lia decided she wanted to make some bread and it was delicious!
