Freezing Pulled Pork
Today I’m sharing my idea for freezing pulled pork. A few weeks ago Food Lion had Boston Butt pork roasts on sale for 99 cents a pound, regularly $2.29 and since I love to make pulled porked I knew I needed to got one. It was a little over 17 pounds for $16.93, a savings of $22.23! I shop like a hawk especially with prices of everything going up so quickly and my hawk eyes did great on this deal. When I got home I cut it in four pieces, marked the approximate size on the label and froze them.
Well the other day I cooked one up in my Blue Diamond cooker and did the house smell good! It only took about 3 hours and it was so tender when finished cooking. I shredded it with my meat claws and was ready for a great meal.
My favorite sides to go with pulled pork are potato salad from my mom’s recipe and home made baked beans using my grandmother’s recipe.
Since we were making to go meals for our neighbor who recently returned home from the hospital Lia decided she wanted to make them some blueberry smoothies too. YUMMM!
We made up two meals to go for our neighbor then Rich and I each had a delicious dinner and we still had left overs. I came up with a nifty idea to freeze the left overs.
I divided the left over pork into four individual serving sizes, added some of the leftover meat juices and froze them on a cookie sheet before putting in a freezer bag. There is enough in each section for two pulled pork sandwiches, just heat the pork up and add barbeque sauce! I used the 6 pound piece of pork for this meal, I made 4 meals plus had enough left over for sandwiches the next day and froze 4 more meals worth. Not bad for around $6.00 for all those meals!
I obviously have no idea what pulled pork tasted like- or what it looks like. Glad you love it.
You can actually pull beef too Roy, just cook a roast until it’s done and very tender. Pull it apart with meat claws or a few forks. The more tender, the easier it is to pull about in little string like pieces of meat. It’s delicious!
