Four Pound Meatloaf

How far can a meatloaf go? No this is not a joke, it’s about my four pound meatloaf and how many meals I got out of it!

I love Fresh Market’s Tuesday meat specials, they have Ground beef for $2.99 a pound we we usually stock up for meatballs or meatloaf. This week it was meatloaf! Meatloaf is one of those meals that is quick to prepare and then do nothing while it’s in the oven.

My cooking started Wednesday morning, I plopped the ground beef in a mixing bowl, added chopped onions, bread crumbs, eggs, ketchup and seasoning. I mix everything together, flop it in a baking dish, form it to look pretty and add a ketchup heart on the top.

After baking it for an hour at 325 degrees, I check it and if it needs more baking, I do 30 minutes at a time. This baby took about 1 1/2 hours to fully cook.

Day One Meal

Our first meal was the basic meatloaf with mashed potatoes and corn dinner.

Day Two Meal

We stopped at the roadside stand in the morning and got some delicious strawberries, sweet potatoes and squash, total cost was about $7.00. For day two we had left over meatloaf, hubby had left over corn while I finished up some cabbage and I cooked up two sweet potatoes. We topped the dinner of with fresh cut up strawberries.

Day Three Meal

For the third day the meatloaf meal brought back memories of my grandmother. When she made meatloaf for dinner, the following day I would have a meatloaf sandwich packed in my lunch for school. So that’s just what we had, meatloaf sandwiches with the summer squash we got the day before along with my unending leftover cabbage and baked beans.

One reason I like Fresh Market is their meat is always fresh and not prepackaged. It’s wrapped in brown butcher paper and the nutrition facts are printed right on the paper! The 4 pounds of ground beef cost about $12.00 and the sides totaled to about $6.00 for all of them so for $18.00 I was able to get 3 dinners for hubby and me. That’s 6 meals for about $3.00 each! Oh and we still have a few slices left for munching on during tomorrow’s meals!

Can’t forget the fresh lettuce!

I can’t forget the salad we had with each meal! Lia helped me pick lettuce from our garden, can’t get any fresher than that for a delicious healthy salad.

    Great meals and so wonderful to have many meals from one meatloaf.

  2. Love the Blog. I like to prepare meatloaf, but since it is for may significant other and I, I usually limit it to two pounds. And I love meatballs too! I am going to watch your blog for a recipe on meatballs. Hope it comes soon.

      Thanks Douglas, we also are a 2 person family and while I usually make a two pound meatloaf I knew we had a busy week and this was a way to have my meals ready without have to plan! I’ll have my hubby get the meatballs going but his recipe is a secret. Thanks for visiting!
