Finger Lickin’ Chicken
We’ve had a gas shortage in South Carolina, among other states, and most of the stations have been totally out of gas or the ones that had gas had up to 60 – 70 vehicles waiting in line to fill up. However Friday morning we were heading to an appointment in North Myrtle Beach and there was a Circle K gas station with gas and NO WAIT! Rich pulled in and went right up to the pump, filled up our tank which was half full so we’re safe for now. However we did have to wait in line for something else, we waited for finger lickin’ chicken!
Last month Raeford Farms in North Carolina was taking orders for chicken to be delivered to different locations in North and South Carolina. One location was in North Myrtle Beach, right down the road from us! They had 40 pound bags of boneless, skinless breasts, legs and thighs or drumsticks. I ordered a box of the chicken breasts and my neighbor and I split it, each getting 20 pounds of finger linkin’ chicken. Our time slot to pick up the chicken was 9:00AM Saturday morning. When we got to the location there were about twelve cars in front of us so we got in line just like others had done for gas!
The line moved quickly and when we drove up to the refrigerated truck I handed the employee my confirmation, Rich opened the tailgate and they put the chicken in the back. We were in and out in about fifteen minutes!
Each 40 pound box had four 10 pound bags of chicken in it making it easy to split with our neighbor. We dropped hers off and of course Lia and Carlos had to visit for a bit.
I had covered my craft table with heavy plastic and Lia and I got busy putting our 20 pounds of chicken in freezer bags. Now I don’t know how big these chickens were but the box was labeled JUMBO CHICKEN BREASTS and were they jumbo! Some of them were so large Lia and I had cut the breast in half! Lia carefully cut the chicken as I showed her were to snip it.
She carefully put two pieces in each bag and we ended up with nine bags with a total of 20 pieces. That’s at least 20 meals but some being so huge, I know we will have left overs so will probably end up with close to 24 or more meals. Each share of the cost was $27.50 so that’s just over $1.00 per meal!
We dated the bags, put them in the freezer and I checked them through out the day to make sure the pieces didn’t freeze together. Our freezer is filled with finger lickin’ chicken and now I’m looking for some recipes!
It was a busy morning especially since Lia was under the weather but she did great helping me with the chicken. Her and pop took a break after all the work was done and making their plans to see what would be next for the day.
We had a package of five chicken breasts in the freezer that we wanted to use up before out new load came in so Alexandra made a delicious chicken alfredo lasagna! Look how thick it is, loaded with chicken, cheese and alfredo sauce. Alex’s lasagna whether beef or chicken is awesomely delicious and we made meal prep boxes up for the freezer so we have at least eight meals ready to eat! We purchased 80 pounds last year at the beginning of Covid Amrita and it lasted the entire year! Lia was a big help for sure!
When I saw the name finger-lickin’ chicken, I thought it was already cooked. SO the name stands for whatever recipe you make — that is what is going to be finger-lickin’… LOL. Once I get my house decluttered — including my freezers, I will start meal prepping again!
I cleaned out both freezers a few weeks ago to get ready for chicken Dominique. Now to find some new and exciting chicken recipes.
Hi Martha and Lia, My first thought was Finger Lick’n Chicken was a restaurant, but I see how convenient that is to have local fresh chickens delivered to your area. Pretty clever to split that with friends and neighbors! The food looks delicious, too, that’s what I was looking for, lol! :p
Totally sucks to hear about the gas shortage, I didn’t realize it was so bad on the other side of the US. On the West Coast I know we pay the most for gas, California has the highest prices in the nation hitting $5/gal. I guess we shouldn’t complain, my friends in other countries say they pay about $2/liter well over $6/gal. Praying our shortage doesn’t last long or that we can find quick alternative solutions.

We love chicken Jaime so the sale came at the right time. 40 pounds was $55.00 but next month it is going up to $81.00! Glad I got it before the increase! Now Lia, Alex and I will be coming up with some delicious meals. Gas prices are unreal all over!
I love the idea of a big purchase and breaking it up to freeze. Will need to see if that is around here! Oh – and Lia’s hat is adorable!
Our freezer is full now Angie! Lia’s hat and apron was a set she got for review. She loves wearing hats.
Oh my gosh! It looks like you’re going to be in chicken heaven! I’m looking forward to seeing your posts about all of the different ways that you and Lia cook the chicken! Oh, and Lia looks quite delightful (as well as happy) in her chef costume!
I’m hoping to come up with a delicious meal using my new pressure cooker Alice. I have a few tried and true chicken with cauliflower and broccoli recipes that I’ll be trying again also. Stay tuned!
