EGGCELLENT Filling Meal
Are you wondering what to have for breakfast or maybe lunch or even dinner? I love having breakfast for dinner and my EGGCELLENT filling meal is one that is perfect for any time of the day. You probably guessed my EGGCELLENT meal is an omelette which is so easy to make plus delicious.
Follow my easy directions and you will have a super delicious meal that fills you tummy any time of the day.
I start by frying up some strips of bacon and dicing up onions and peppers. (The peppers are from our garden and they keep growing and growing!) After adding eggs to a mixing cup, (I use four eggs for two omelets) I add a few crumble up strips of bacon, the diced peppers and onions plus shredded cheese and whisk all together.
Melt a small amount of butter (or oil if you prefer) in a fry pan and when melted pour the egg mixture in the pan. Cook on medium heat until the bottom is slightly brown then flip over. This is where I add some diced tomatoes and a few slices of swiss cheese. If you don’t have swiss you can add more shredded cheese. Cover the pan and let the cheese melt.
There are many variations for this meal, try diced ham or steak, sliced up sausage or even chicken instead of the bacon plus spinach is a good tasty edition also.

I love all cheese Jill but usually use the shredded cheddar or 4 cheese blend. I just happened to have the swiss on hand from ham and swiss sandwiches so thought I’d add that. I love swiss! Thanks for stopping by!
Eggs and cheese – yum! I could also see this with 2% American cheese, which is what my husband uses on his omelettes.
That’s the good thing about an omelette Alana, they can be “adjusted” to people’s diet by changing the cheese and can even be made with Egg Beaters. Sometimes I make just a vege omelette, they are all so delicious and filling.

That look soooo good! Wish we still kept the cheese we aren’t supposed to eat in the house so I could make this. But I know I’d miss the cheese. It just goes with the eggs. Guess I’ll have to think up something else for lunch. Time to get out the crock pot and make soup. It’s beginning to be soup weather.

I love the four-state cheddar Jeanine! But then again I love most every kind of cheese. If I don’t have swiss, I add more of the cheddar to the top of the omelette. The more cheese the better!

Yummy. Looks good. I love making omelettes and have used a variety of cheeses, including feta, blue, and cheddar. I’ve added various vegetables, as well, but I’ve never added bacon!
