Easy Macaroni Salad
It’s not Friday Story Time by Lia but I’m helping ma make her easy macaroni salad.
I like quick and easy recipes and to the best my memory serves me this is how my grandmother made her recipes also. My easy macaroni salad recipe is one I love.
Ingredients
1 lb. box of elbow macaroni
3 cans tuna
6-8 hard boiled eggs
mayonnaise
seasoning mix
Instructions
Boil the macaroni (let cool), drain the tuna and chop the hard boiled eggs. For an easy way to drain tuna, check out my blog from years back. http://themarthareview.com/draining-tuna/
Mix the tuna and egg with the cooked macaroni then add the amount of mayonnaise you like. I usually put two large spoonfuls in to start and add more if needed. Add seasoning to taste and mix well. Refrigerate until ready to eat.
How easy is this? Making macaroni salad is great for any meal but also for a quick last minute recipe to put together for unexpected company.

Always love it when Lia makes her appearance onto the blog posts……being vegan- I would use vegan tuna or maybe mashed chickpeas and maybe tofu scramble- Now, I wonder how that would be? But I do use vegannaise- is this my challenge to try a veganized version of your grandma’s recipe?!??!?!

Well we were just giving you a quick and easy meal Kat! While we think of salads more for picnics and summertime, I love them year round.

while we don’t eat fish or meat, we do love macaroni salads with boiled eggs, lots of cheese, and even some veggies thrown in…and Lia is getting to be a master-chef
I love macaroni salad, I never thought of adding cheese to it Vidya! Lia enjoys helping with cooking and baking, not sure if she will open a restaurant or bakery. LOL
I love Macaroni salad, but I’m allergic to Tuna. What other type of meat would go well with this dish? Thanks for the help. Loved the photos. 🙂
Awwww, that’s a bummer Amanda! You can actually substitute it with chicken, canned salmon (if not allergic to that) or it’s even good with just the macaroni and eggs! Let me know if you try it!
