Easy Broccoli & Cauliflower Salad

Most of my readers know I love coming up with quick and easy recipes. But I also like them to be healthy. Well today I’m sharing my delicious, quick and easy broccoli & cauliflower salad.

What you need

1 head of fresh broccoli florets

1 head of fresh cauliflower

1/2 cup Dried cranberries

3 – 4 strips of cooked bacon, cut in small pieces or crumble

Mayonaisse

Red Wine Vinegar

Sugar

What to do next

Cut the broccoli and cauliflower in small to medium pieces. I like to blanch the broccoli for about 30 seconds until it turns a bright green. Rinse in ice water and drain.

Toss in the dried cranberries and the crumbled pieces of bacon.

Mix 1/2 cup of mayonaisse, 1/8 cup of sugar, 3 tablespoons of red wine vinegar together and mix with the broccoli and cauliflower blend. (These amounts may need to be adjusted depending on the size of the broccoli and cauliflower heads.)

Let it marinate for at least 30 minutes, the longer the better as the dressing adds so much flavor.

Last step

Grab a plate and serve up some of this delicious broccoli and cauliflower salad!

  1. My version is to steam both veggies, add cranberrries (NEVER the bacon) and then add the red wine vinegar, 1/3 cup of mayo, and 3 tbsp of sugar alternative to the mix. I find the concoction is better hot than cold, but my guests like it both ways.

    I love a good broccoli/cauliflower combo! I had never thought to add dried cranberries, thanks for that tip. I love slathering my broccoli in homemade hummus (thin it out with some water or lemon juice) and letting it marinate just as you suggest. All of that yummy goodness gets into the florets creating a little party in every bite.

  4. Since I like the ingredients listed, this is a recipe I might like to try for my family. I’d have to substitute something for the bacon (we’re vegans)–perhaps smoked tempeh. Thanks for sharing it.

      Actually you can just make it without the bacon, I only add that occasionally. This is is quick and easy to make Rachel, if you make it, let me know what your family thinks!
