Working my way through the alphabet for the A to Z Blog Challenge, today I decided to write about E is for Eggs! There are so many ways to prepare eggs and they are great for either breakfast or dinner. There are times when we come home from work, I don’t have a clue what to have for dinner until I see the box of eggs! When having eggs for dinner, I joke about not having time to make breakfast so I’m having breakfast for dinner! There are all different ways to make eggs, you can fry them sunny side up with soft yolks or have them sunny side down with the yolks harder. Scrambled eggs are great to make into sandwiches, my hubby likes to add ketchup to his sandwiches. My favorite way to prepare eggs is an omelet and I’m going to share my recipe with you.
I start with three eggs in a bowl or large cup and whisk them together. Next I add a small chopped onion and some chopped up ham or bacon. Whisk again and add shredded cheese. I never measure, I just pour in the amount I think looks good.
I add a little butter in the fry pan and as soon as it’s melted, I pour in my egg mixture. I cover the pan for a few minutes then flip the eggs over.
Just before the omelet is ready, I sprinkle more shredded cheese on top and let that melt. This is such a delicious meal, whether it be for breakfast, lunch or dinner.
Of course, we can’t forget hard boiled eggs. Deviled eggs are great on a vegetable plate, they turn a regular hard boiled egg into a fancy egg. Some people in our family like regular hard boiled eggs while others prefer the deviled eggs so I usually make half and half to keep everyone happy.
Egg salad sandwiches are quick and easy to make, just chop the cooled hard boiled eggs, add seasoning and even a little pickle relish, mix with mayonnaise. I like to have open faced egg salad sandwiches on a bed of lettuce. How easy is that for a meal?

I love eggs prepared all sort of ways. My favorite would be eggs benedict or omelet.

I love eggs and I eat a lot of them. My favourite it a runny-yoked fried egg with sausages and brown sauce. Yummy!
That’s how my grandfather would eat them Bill!! The runnier the better for him. I prefer my yolk more solid but I do love eggs just about any style. Thanks for visiting Bill.
Omelettes are ok. But, if I were to choose an all-day egg choice, mine would be shakshouka. (Mornings are for sunnyside up, of course 🙂 )

LOVE eggs! Hard boiled eggs and egg salad sandwiches are probably my favorite. I like spinach omelettes too. Now I want one, haha!
