Dessert Time

It’s Day 11 already in the Ultimate Blog Challenge, we are 1/3 of the way through the month already! I’m going to follow the suggested topic today and write about desert time. It was asked what’s the best dessert you’ve ever eaten. Now that’s impossible for me to come up one ONE dessert! But here are a few of my favorites.

My all time favorite is my grandmother’s Chocolate Cake with Mayonnaise. It is the most delicious, moist cake I’ve ever had and it always brings back memories of my grandmother when I make this cake.

I’m usually not a frosting lover but this white fluffy frosting is the best with the chocolate cake! When I make this for dessert time, I even serve it on the platter my grandmother used over 70 years ago!

CHOCOLATE MAYONNAISE CAKE

1 cup water

1 cup mayonnaise

1 teaspoon vanilla

2 cups flour

1 cup sugar

3 tablespoons baking cocoa

2 teaspoons baking soda

Blend the water, mayonnaise and vanilla in a bowl until mixed well.  Gradually add the flour, sugar, cocoa, and baking soda into the mayo mixture until well blended.

Pour into a greased 11″ x 7″ pan and bake 350 degrees for 30 minutes or until a cake tester or toothpick comes out clean after inserting in the center of the cake.

White Fluffy Frosting

1 cup granulated sugar

1/3 cup water

1/4 teaspoon cream of tartar

2 egg whites

1 1/2 teaspoons almond flavoring

Add the sugar, water and cream of tarter together and cook over medium heat until the sugar is dissolved and it starts to boil.

Beat the egg whites and almond flavoring together until it forms soft peaks.  Slowly pour the sugar mixture into the egg whites beating on high speed until it forms stiff peaks.

Frost your cooled cake and sprinkle coconut over the top if desired.

Organic Almond Joy Bars

Blackberry/Raspberry Sauce

Here is my mouth-watering recipe for my Blackberry/Raspberry Sauce. It’s the best dessert topping for cheesecake, ice cream or milk shakes.

1/2 cup of water

1/2 cup of sugar

1/8 cup fresh (or frozen) each of blackberries and raspberries

4 ounces blackberry (or raspberry) preserves

Add the water, sugar and berries in a saucepan and bring to a boil. Reduce heat to simmer and continue to cook about 5 minutes, stirring often. Stir in the blackberry preserves and cook on low heat until the preserves dissolves. 

When I make a milkshake I blend chocolate ice cream and milk then add a few spoonfuls of the sauce. It has just enough flavor to turn the shake into a chocolate berry shake! Add whipped topping and drizzle some of the sauce on top!

Okay, I’ll let you in on a little secret. I originally made this sauce as a marinade for salmon. I had some left over and that’s how I came up with the idea to use it with ice cream for dessert time!

I have so many more favorites but this blog is making me hungry so I’m going to make some chocolate chip cookies!

    oh my…I just gained 100 pounds!!! LOL – – I’m going to have to try that Chocolate cake with mayonnaise. Never have had one to my knowledge. That rasberry/chocolate sauce looks amazing as well. I’m not a big rasberry person – but blackberries – – oh yes indeed!!!

      LOL maybe I should have added some exercises to the blog post Nancy! I hope you try the cake and let me know how you like it! As for the sauce, you can omit the raspberries and just use blackberries. I’ve done that and it’s still delicious!

      I’ll be waiting for a taste report Paul! My grandmother would give me this chocolate cake for breakfast (against my mother’s wishes) but she told her that mayo has eggs so it’s healthy! AND DELICIOUS!

    All of those desserts looked yummy, and I hope that I don’t gain wait by looking at photographs of gooey desserts. I don’t know about mayonnaise as an ingredient, though, especially when I am fighting the War On Condiments!!!
