Dessert Day!
National Dessert Day is celebrated October 14 and yes I know today is the 15th. I actually baked a few cakes yesterday but I used the suggested topic for my blog so that means I’m carrying over Dessert Day! I’m sharing the recipes for a few delicious cakes I made.
White Cake with Cinnamon/Brown Sugar Topping
The first dessert I made was a simple one using a white cake mix. But since we aren’t big on a lot of frosting, I made a cinnamon topping instead. Just mix all these ingredients together, drop spoonfuls on cake batter and run through with knife. I then sprinkled a bit of cinnamon and sugar over the top before baking. 1/2 cup of dark brown sugar, 1/4 cup of flour (plus a little more if mixture is too sticky), 1/4 cup of room temperature butter, 1 teaspoon cinnamon. Bake per the instructions on the cake box. I used a 9″x13″ cake pan and while baking the topping seeps through the cake and how delicious!
Such a simply recipe and oh so good! I’ll give you a hint, it’s hard to wait until it’s cool to eat!
Chocolate Tea Cakes
This is a recipe that I’ve had for years and it’s for mini cupcakes but I just use a 9″x13″ pan. Cupcakes are nice if taking to a party but the cake is easier when just eating it at home. This is the recipe, it doesn’t have eggs in it for those with egg allergies. 1 1/2 cup flour, 1 cup granulated sugar, 1/4 cup (plus 1 teaspoon) baking cocoa powder, 1 tsp. baking soda, Pinch of salt (I omit this), 1/2 tsp. vanilla, 1 cup hot water, 1/2 cup vegetable oil, 1 tsp. cider vinegar.
FILLING – Blend all ingredients together 1 8 oz. package cream cheese (softened) 1/2 cup granulated sugar, 1/2 package mini chocolate chips. If making cupcakes, drop a small amount on each cupcake. If using a sheet cake pan, drop them about 1″ or so apart so when you cut them the serving pieces will be about the size of a cupcake unless you’re like some and need more! Bake 350 degrees for about 12 minutes for mini cupcakes or about 22 minutes for sheet cake. Taste with a toothpick in the center.
This recipe is so good and if you like chocolate you have to try it! Another hint on this one, it’s DELICIOUS warm with a glass of cold milk!

I didn’t celebrate – I’m fighting my weight right now. I did eat some leftover honey apple cake I baked back in September – it keeps well in the fridge. I hear you when it comes to frosting – in fact I don’t like that stuff they pour all over cinnamon rolls, either. Call me strange! I will save this for another time, though.
OMG, some of the glaze/frosting on store bought cinnamon rolls are almost sicky sweet! I started my healthy eating diet July 2018 because of my non-alcoholic fatty liver disease and don’t eat many sweets at all. But I do have some delicious healthy desserts, I’ll have to tag you in my blog I previously wrote. You can still watch your weight and have some goodies now and then. Thanks for visiting Alana!
