Delicious Seafood Dinner

I’m usually writing about my meals for pennies but I splurged on this Sunday dinner.   Jumbo shrimp were on sale at the seafood store for $4.98 per pound!  I got two pounds of shrimp, a pound of huge sea scallops for $10.49,  and a pound of both potato and seafood salad for a total of $9.50.  So our delicious seafood dinner for two was just under $30.00, which is more than I normally spend but way less than what it would have been at a restaurant.  Plus I have enough shrimp left over to grill with the steak for tomorrow’s dinner.

So here is dinner:

I started by boiling some of the shrimp for peel and eat. When it was finished boiling, I drained it and added  the shrimp and crushed ice in a large bowl.  I set that aside to chill while preparing the rest of the meal.

The extra shrimp that I didn’t boil,  I peeled and deveined them and  I made the most delicious sautéed shrimp.  I melted a small amount of butter in a fry pan, added the shrimp, browning on one side then flipping to the other.  It only took a few minutes and then I sprinkled with Parmesan cheese.

 

 

I tossed it around, cooking a bit longer and the smell of the butter and cheese with the shrimp smelled delicious! Check out this short video, it looks SO good!

I prepared the scallops about the same way, added butter, put in the scallops and cooked until browned and done.  I took my portion out and added them to the pan with the shrimp and cheese and my and my, what flavor.

The shrimp and scallops, along with the potato and crab meat salad was a mouth-watering dinner. Plus with the left over shrimp, that will be great on the grill with steak for tomorrow’s dinner along with the salad.  I spent about $30.00 but $7.00 will be for the next dinner, so the bottom line for hubby’s and my Sunday dinner was under $23.00.   Not bad for a delicious seafood dinner!

    Oh does that ever look so yummy!!! I want seafood for dinner tomorrow. I think I am going to pull the fish out of freezer and let it thaw.

    I love how you are able to make two meals out of one. That lowers you cost even more and stretches further.

      It was super yummy Sandy! And you know me, I’m always looking to stretch my meals. I love fish plus it’s healthy. Let me know how your fish dinner is when you make it!
