Delicious Dinner Salads
I’ve been creating new healthy meals and today I’m sharing two of my delicious dinner salads. I purchased a head of cauliflower and broccoli that started my creations.
Broccoli and Cauliflower Salad
I set out the ingredients and with the help from Lia we started making our broccoli and cauliflower salad!
After cutting the cauliflower florets in pieces I washed them and put them aside. Next I cut the broccoli florets into small pieces and steamed it for about 5 minutes. I immediately poured it in a pan of ice water so it would cool and keep it’s rich green color.
We put a cup of each, broccoli and cauliflower pieces in a bowl and then added 1/3 cup of the following: dried cranberries and slivered almonds. Next I crumbled two slices of cooked bacon and Lia added that to the mix along with 1/3 cup of shredded cheddar cheese.
Lia carefully mixed all the ingredients together for the start of a delicious salad. Next was making our homemade raspberry salad dressing.
This is my own recipe I came up with for Raspberry balsamic vinegar salad dressing. Add to mixing cup – 2 tablespoons Balsamic vinegar (I used Rose’ balsamic), 1 tablespoon red wine vinegar, 1/4 cup olive oil (I use Avocado oil) and 1 teaspoon dark brown sugar mixing all together until the sugar is dissolved. Add 4 – 6 raspberries (I use frozen ones) and mix again until the raspberries break up in small pieces.
We also boiled up some eggs to garnish the top of the salad. Lia did a great job of peeling them and of course she had to try an egg that was left over.
One of our delicious dinner salads are ready to serve! Something about adding the dried cranberries and almonds make this taste awesome!
Cauliflower and Salmon Salad
I had some cauliflower left over from the head that had already made two meals so for my next salad I combined lettuce, tomatoes, cucumbers, dried cranberries and slivered almonds in a bowl and mixed together. But then I decided to add a pouch of salmon! I drizzled some of the left over raspberry salad dressing over the top, added shredded cheddar cheese and hard boiled eggs. I had my salad with a side of Milton’s Gluten Free baked crackers for another delicious and healthy dinner salad.

Well for 44 cent a pound, I couldn’t resist Roy. I freeze it in serving size bags for cooking a quick and healthy meal!
They look yummy!! And Lia did an excellent job, as always. I thought I was ready for salad, but I may not be yet, because I bought one, and then let it sit in the fridge until it was past its date. Oops!
I have always eaten salads Jeanine, mostly just garden salads but lately since I’ve been experimenting, I’m LOVING my new creations. The salad with salmon and cauliflower is my favorite!
