DELICIOUS DEEP-FRIED ONION RINGS
As I was preparing dinner, I had a craving for delicious deep-fried onion rings but of course I didn’t have any in the freezer. I started looking up recipes and most called for buttermilk which I also didn’t have. So I did the next best thing, I came up with a quick and easy recipe. I was surprised at how the batter was crispy but very light and I could enjoy the taste of both the onion and batter. Some of the frozen ones are so heavily coated, it’s hard to even taste the onion. If you like onion rings, you’ll have to give this recipe a try!
These are the ingredients you need, just add them to a bowl and whisk them together:
1 sliced onion
1/2 cup of flour
1/2 teaspoon baking powder
1/2 teaspoon seasoning salt
1/2 cup of water
1 egg
Add oil to a deep fryer or a large pot and heat to 375 degrees.
I cut my onion into slices and pulled them apart to add to the batter. After the onion slices are covered with the batter, I carefully dropped them in the batter, turning them when slightly browned. If you are preparing more onions, you can double the recipe.
It only takes a few minutes for the coating to turn a golden brown and then I drain the cooked onion rings on paper towels. The hardest part was not eating them before I got them on the dinner plates! You can use the entire onion, however I saved the smaller pieces at the end to sauté hubby’s burger.
I cooked wild caught sockeye salmon with a lemon butter sauce to go with my delicious deep-fried onion rings and what a filling meal it was! Do you like onion rings and do you have a favorite recipe? I’d love for you to share it if you have one.
