Delicious Cinnamon Bread
Lia and I made the most delicious cinnamon bread and the best way to eat it is warm from the oven! It takes ingredients that are usually in every kitchen and it’s quick and easy to make. The only ingredient you might not have is buttermilk but I have added a recipe to make buttermilk from regular milk and vinegar below.
Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup sugar
- ¼ cup butter softened
- 2 eggs
- 1 cup buttermilk or sour milk
- 1 teaspoon vanilla
- 3 tablespoons brown sugar
- 1 ½ teaspoons cinnamon
Don’t have any buttermilk, no problem! Here is how I make mine.
FOR 1 CUP OF BUTTERMILK – I add one tablespoon of vinegar (can also use lemon juice) to a measuring cup then add milk to the one cup line. Mix together and let sit for about 10 minutes.
Directions
- Preheat oven to 350°F. Spray or grease a 4″ x 8″ pan (When making for gifts I use three 3″ x 6″ disposal pans)
- Combine flour, baking powder, baking soda and salt in a bowl. Mix well and set aside.
- Cream sugar and butter together in mixer at medium speed.
- Add eggs and mix well then add milk and vanilla.
- Add in dry mixture and stir with a spoon just until combined.
- Combine brown sugar and cinnamon in a small bowl.
- Spread 1/2 of the batter into the prepared pan. Sprinkle the brown sugar mixture on top. Add more batter topping with the sugar mixture. As a special treat we sprinkled sugar cookie sprinkles on top of our second batch before baking.
- Bake 45-55 minutes or until a toothpick comes out clean. (For the small pans bake for 30-35 minutes)
- Cool in the pan for 5 minutes. Remove and continue to cool completely on a baking rack.
After we made the three loaves of bread there was a small amount of batter left so Lia grabbed her gingerbread molds and made a few cinnamonbread men!
The longest part for Lia is the waiting and watching the bread bake! Even Snowball is in the background hoping when it’s done we will drop a few crumbs on the floor for him! Look at this yummy bread, hot out of the oven!!
This bread is delicious eaten warm right from the oven. If there is any leftover, I store in the refrigerator. Slice and microwave for 10 seconds and it tastes like it came right out of the oven. Of course I lather mine with butter!!
French Toast
My sister saw a picture of the bread Lia and I made and mentioned it would be good as french toast. So of course I had to give that a try right away! I wisked an egg in a bowl and dipped the bread in it. Then I added a little butter in a frying pan, let it melt and dropped the bread in to brown on both sides. The verdict…. IT MAKES A DELICIOUS CINNAMON BREAD FRENCH TOAST!! I loaded it with butter and it’s so sweet it doesn’t even need maple syrup! So here you go Nancy, cinnamon bread french toast!

Oh my gosh, that looks and sounds DELICIOUS! I want to make it now. But maybe with a bread mix, so I don’t have to do all of that, that you did. LOL!
Bread mix would work but not sure if it would have the same sweet taste Jeanine. It’s not hard or very time consuming, go for it and let me know what you think!

I love to bake Karen but I think because of Lia, we do so much more. She loves baking and it’s great to spend quality time together.
Finally something I can make with sour milk 🙂 Actually, I plan to make this very soon. And, I might cheat- use margarine and soy milk (with vinegar), so it will be available for meals that are either meat or dairy. I’ll let you know how that turns out.

All right, Martha!! Cinnamon swirl anything is a really weakness for me. I’ve got to try your recipe! Ever try it with almond flour or rice flour? Yummm– the possibilities are endless.
Now you gave me an idea Kebba! I have a bag of almond flour so Lia and I was experiment with that for our next batch!

Thanks Lynn, both the bread and french toast were delicious! Lia enjoys baking so much that she will open the cupboard and says, “I’m going to bake something.” The last time she said that it was 9PM! LOL
