Delicious Cauliflower and Squash Recipe

The other day I made a cauliflower casserole and I had half the head left for another meal. What do you do with half a head of cauliflower, half a yellow squash, a few stripes of bacon and some shredded cheese? We didn’t have a recipe but Lia and I came up with the most delicious cauliflower and squash recipe for dinner!

Lia started by breaking the cauliflower in pieces and next we cut up the squash. I only used half because I knew hubby would want regular sautéed squash.

Next she put all the cut up squash and cauliflower pieces in a cup and drizzled Avocado oil over the top. Tip about Avocado oil, I received a bottle to review and been hooked in it ever since! It is non-GMO and can be use for high heat cooking without splattering like vegetable oils do. It’s also great with a salad.

After adding onion flakes and a pepper blend seasoning Lia mixed everything together.

I had two pieces of bacon in the fridge so I cut it in small pieces and fried it up. After it drained, I tossed that and a handful of shredded cheddar cheese into the mix along with a tablespoon of milk. If I had whipping cream I would have used that instead of the milk! I added about a tablespoon of Avocado oil in a frying pan and after it was heated up, Lia dumped the cauliflower and squash mix in the pan.

Next I added a slice of cream cheese and let everything cook together on medium heat for about 15 minutes until the cauliflower and squash were tender. I stirred a few times while cooking.

It smelled so good while it was cooking and just before it was ready I sprinkled another handful of shredded cheddar and mozzarella cheese over the top then covered the pan and let it melt on low heat.

For not know exactly what we were making or how it would turn out, I am super pleased with Lia’s and my creation and delicious meal!

Since I was making a different meal for hubby, Lia washed some potatoes to get ready to fry up.

I made Rich scrambled eggs, fried potatoes, sausage links and sautéed the other half of the squash. Both meals were a good way to finish off a little of this and a little of that from the refrigerator!

To the best I can come up with, this is the recipe.

Cauliflower & Squash Recipe

Half a head of cauliflower

Half a yellow squash

2 pieces of crumbled bacon (Another afterthought was added sausage instead of bacon)

1/4 cup shredded cheddar cheese

Onion flakes and seasoned pepper (My afterthought was adding a chopped onion with the cauliflower and squash…maybe next time)

1 tablespoon milk (Whipping cream would be my choice but was out)

1 tablespoon Avocado oil

1 thin slice of cream cheese

Add cut up cauliflower, squash, crumbled bacon, cheddar cheese and seasoning to bowl. Add avocado oil and milk and mix together.

In frying pan add a tablespoon of avocado oil, when heated up add the cauliflower and squash mixture and cream cheese, cooking over medium heat for about 15 minutes or until warm and bubbly. Stir occasionally

Top with a handful of cheddar and mozzarella cheese, cover and turn to low heat until cheese is melted.

I don’t usually measure amounts when I’m cooking but the next time I make this, I will actually measure the amounts. I didn’t realize this would be so delicious and what a filling meal it was! I also have already come up with other ideas such as adding broccoli, almonds and maybe even zucchini! Does our delicious cauliflower and squash recipe sound like something you would like to try?       I had know idea how it would taste but I love it! Of course it can be seasoned to your liking and even add other ingredients. That will be Lia’s and my next one, add different things in the recipe! Let me know if you try it!

  4. Neat idea! I tell you, Martha, you come up with the most creative and the most delicious ideas!! I’m not wild about cauliflower, but if you add broccoli, bacon, cheddar and potatoes, count me in.

  5. Hey, Martha, when I make this dish, I’m going to cook it in my convection oven instead of frying it. The least work I do in the kitchen, the better. 😁

      I was actually thinking that as I was stirring while cooking Florence! I made another cauliflower dish the few days before this one and baked it, delicious! I’ll be sharing that soon.

    You hit the jackpot with this one, both healthy and great tasting. I might add a bit of corn off the cob during the corn season because I love corn that time of year. I also like that it appears you also served potatoes as a side. I never turn down potatoes (My Irish Side of the family I guess) Great picture store to go with the recipe.

      Thanks Chef William! I plan to tweak it and add broccoli next time…corn would be good also! I don’t eat many potatoes but since I was making them for hubby, I decided to have some also. I also think I’m going to try baking this in the oven next time. Stay tuned for part two!
