Delicious Bruschetta
I love when my granddaughter comes over and we start pulling ingredients out of the cupboard and refrigerator not always having a plan. The other day Alexandra and I made delicious bruschetta!
Bruschetta is an Italian appetizer that is a mixture of tomatoes, seasoning, olive oil and red wine or balsamic vinegar. It’s easy to make and great for a quick snack or even for a party because you can whip up a small or large batch.
This is our recipe for our quick snack, you can double, triple or make it 10 times the amount for a party!
Bruschetta
2 large tomatoes, diced
2 tbsp. olive oil
1 tbsp. red wine vinegar (or balsamic vinegar)
1 tbsp. italian seasoning (add to taste) Alexandra made her own version of italian seasoning with oragano, parsley, italian dressing seasoning mix, and seasoned pepper blend.
Sprinkle garlic powder to taste
Mix all ingredients together, add parmesan cheese and mix again
Let set about 20 minutes.
Slice Italian bread 1/4″ thick, spread with olive oil on both sides. (We tried something different this time, we used the mixture from the brushetta for the top) If serving this at a party, after you slice the bread, cut it in narrow pieces about the size of a finger.
Bake 400 degrees until browned, flip and brown the other side. (You can also toast the bread but it won’t have the same taste as with the olive oil)
Spoon the Bruschetta over the bread and get ready for a mouth watering, delicious appetizer.

Nothing to do with Bruschetta other than my hubby is Italian and today is our 1st born grandbaby’s birthday. Little Chuckie was born at a whopping 10 pounds on October 29, 1987. This is the day after he was born, the other is more recent. LOL Happy Birthday CJ, hope your day is as awesome as you!
I like a good bruschetta on occasion. And, this seems like a great recipe- but I’ll reserve my indulgence for the few times a quarter it’s on the menu in a restaurant.
