Day Two Meal Ideas

But after five days worth of Thanksgiving dinner, I still had more to go. I planned to make split pea soup with the ham bone but I couldn’t find my bag of peas! Guess it’s time to re-organize the pantry again! However I wasn’t about to let the ham bone go to the dogs! LOL Instead I made ham and potato soup and it was so easy and delicious!
I added the ham bone, some extra cut up ham pieces, cut up potatoes (I leave the skin on), onions, carrots and green beans (I didn’t have any peas so I added the beans for color) to my Blue Diamond cooker. I added about a cup of water, set the cook time for four hours and that was it. We got home about three hours later and the house smelled so good!
I checked the soup, added some cornstarch with water to thicken it a bit and cooked for an additional half hour.
The soup was ready to eat after I added shredded cheddar cheese blend to the top! But the best part was having enough left over soup to last another 2 days even after sharing a container with my neighbor who’s hubby was in the hospital.
Soup is so easy to make and tastes so good! You can freeze it in individual meal prep servings and just heat it up when you need a quick and easy meal! One thing I found out is it thickens as it is in the refrigerator so you may want to add a bit of water if you want it thinner. If you don’t eat ham, you could add turkey, chicken or even beef to the pot. I’ll be making another pot from our Christmas ham bone!
So our Thanksgiving dinner lasted well over a weeks worth of meals and so many different variations. Do you like to make soup, what are some of your favorites?

Oh I love chili Julie and I make it often. This was actually the first time I’ve made soup from scratch and now I’m hooked. It was so easy and delicious! I have another pot going right now with the New Year hambone Julie!
I love soup on a cold winter’s day. I don’t know what a Blue Diamond cooker is, but I like to make soup in a crockpot when I can. It makes the flavors blend so well.

Blue Diamond is the name of my crockpot/pressure cooker Laurie but it also has a sear feature. I now hooked on making soup because it save me from tossing little bits of this and that!
Boy, this concoction has managed to cross almost every one of my dietary restrictions. Glad you liked it- I would (and do) avoid it like the plague.
