Day Three Meal Ideas
Today I’m sharing Day Three Meal Ideas and since we just celebrated New Years Eve I thought I would share how many ways I prepared our shrimp. Here is the link to day two if you missed it. http://themarthareview.com/day-two-meal-ideas/
But first take a look at Lia’s New Year’s Eve creation! While I was preparing dinner, Lia decided to make dessert! Her delicious smore’s brownies were a big hit!
Every New Years Eve we have boiled shrimp and sauteed sea scallops to ring in the New Year. Of course we need chips and dips and a cold glass of…. are you ready for this? GRAPE JUICE! We eat early to have munchies throughout the evening because we never seem to make it to the strike of midnight, we’re lucky to make it past 9PM! LOL But we always get lots more shrimp for the next day…and the next day…and even the next day!
After dinner Lia was playing around with snapchat filters on my phone. She ended up sending a bunch of her portraits to her uncle and my sister, they both got a good New Year’s Eve laugh.
Sunday New Year’s Day Dinner
Here are some leftover shrimp! For Sunday dinner I sauteed some of them in butter to go with ham, scalloped potatoes, candied sweet potatoes and peas. Some may remember last month I purchased a huge bag of local sweet potatoes and they have gone a long way! I microwaved the potatoes for 5 minutes so after I peel them they are partially cooked. I cut them in small pieces, added butter, the brown sugar and pineapple mix I made for the ham and baked them at 350 degrees for about 30 minutes. They are so much tastier than canned sweet potatoes!
Dessert was prepared by Lia for New Years Day also, she made Unicorn Cheesecake cupcakes! What a great finish to our delicious dinner. Someone told me Betty Crocker always dressed very fine and wore a necklace in many of her photographs. Lia loves to wear party dresses and for some reason she put on a pair of her “beads” when she started her baking project. Doesn’t every Princess wear a lace dress with beads when they bake?
Monday Dinner
Look at my delicious Monday dinner! More sauteed shrimp in butter but this time I added riced cauliflower and peas to the same pan as the shrimp and tossed them all together. I love a simple meal like this. It might not look like much but it is so filling and delicious!
Tuesday Dinner
Look at our fourth day of shrimp leftovers, I added broccoli slaw to a plate of shrimp! I get the bags of the slaw at Sam’s Club, it’s only $2.78 per bag and there is enough for 3-4 normal servings but I could eat the entire bag in one sitting! I didn’t though so I have some leftover broccoli slaw for another day.
If you remember our New Year’s Day dinner, we had ham so that means I have another ham bone to make more soup! This time I have peas to add but I have to get carrots so I can make a big pot of ham and potato soup again!

Welcome back to the UBC to you too Glenda! I can’t get over how grown-up Charlie is now! I used to fry my shrimp but the sauteed shrimp is much healthier. What until you see what I made with our New Year’s left over ham. I’ll be sharing that probably Saturday.
These meals look amazing! And I would love to see the s’mores brownies sometime. Even though I can’t have sugar, it would be a fun thing to see!
