Day One Meal Ideas
I’m doing things a bit different this challenge, I’m going week by week. For the first week I will be sharing some of my meals that go a long way and yes they may include leftovers!
Thanksgiving we had the typical dinner with ham, turkey, stuffing, sweet potatoes, scalloped potatoes, corn and my specialty green beans with almonds and cranberries.
Friday we had basically the same dinner but I love left overs.
Saturday I took some sliced up turkey, added lettuce and cheese and made tortillas with a side of left over sweet potatoes along with some green olives!
I went all out with leftovers for Sunday brunch! I made a ham, egg, broccoli, cauliflower, and cheese casserole. I added cut of broccoli and cauliflower florets with cut up ham pieces to an 8″ square baking dish and topped with shredded cheese. Next I whisked eggs with a splash of heavy whipping cream and poured over the mixture in the baking dish. I baked it about 20 minutes until the eggs were cooked. What a delicious meal this was! For those who don’t eat ham, this is also delicious with turkey!
Monday was leftover casserole made from the leftovers LOL with another turkey tortilla. I also made hard boiled eggs for Thanksgiving dinner but forgot to serve them so we’ve been adding them to our leftover meals.
So our Thanksgiving meal lasted for FIVE days worth of meals, OR DID IT? What until tomorrow to see what else I made with the leftover ham bone!

Martha, you are an inspiration. I really need to add some creativity to our leftovers. I try not to have any because we usually don’t like them at all.
I was raised on leftovers from way back Angel. I usually find eating the same meal as a leftover is boring so by changing some of the ingredients and sides is uses up the leftovers in a new way.
Wow, it sounds like you really made the most of your Thanksgiving leftovers! I love the idea of turning turkey and ham into tortillas and casseroles. I’ll have to try that out for myself. And I love that your Thanksgiving feast lasted for five days worth of meals. That’s definitely a great way to stretch your food and save money. Can’t wait to see what you made with the leftover ham bone!
By know you probably know I’m a penny pincher Paul and I also hate to waste anything. This is great way to save money and not waste food! Hope you enjoy the casserole!

I learned this from my grandmother who could stretch the smallest piece of meat into a meal for seven to last a few days Angie!
Martha, yum yum! All these meals sound so good! I don’t know if you like curry flavors? I like to take any of the leftover roasted turkey and chop it on a big cutting board. then I cover it with curry spices and toss the pieces with my hands. Then I flip all that into a bowl and add mayo, and there you go: curried turkey salad. Works great with roasted chicken, too. Please keep sharing all your cooking/recipes!
OMG that sounds delicious Kebba! Alex has curry in the spice cabinet but I’ve never tried it. Think that will be me next meal to try! I enjoy using leftovers, hate to waste anything!

Well at least you didn’t read it during breakfast Alice. LOL Yes, Lia is growing up so fast and is so excited to learn new things. If she had her way she would bake everyday.
