Christmas Eve Deliveries

Would you like to peek behind the scenes with Lia for day 28 of the Cornerstone Content Blog Challenge? Lia became a little Elf and made Christmas Eve deliveries to the neighbors. These are some of the goodies she made.

Lia’s favorite breads are banana bread and zucchini bread. She decided to make her lemon zucchini bread and used the banana bread recipe with brown sugar.

We also made a few new cookie types. One was Pineapple, Cream Cheese, Pecan, Snowball Cookies. They are fun to make and don’t need any baking. We had to chop more pecans and that is Lia’s specialty! She loved rolling the snowballs in coconut and then showing off the finished cookies!

Here is the simple but delicious recipe. I was thinking next time we might add some chopped up candied cherries!

Another recipe was delicious shortbread with candied cherries on top. The cookies melt in your mouth!

Of course our baking wouldn’t be complete without Italian drop cookies. These are made with ricotta cheese and are so soft!

Lia filled up some decorative jars with cookies, wrapped up loaves of bread, loaded them in a basket and we walked around to our neighbors making Christmas Eve deliveries and wishing everyone a Merry Christmas.

I hope you enjoyed peeking behind the scenes of Lia getting her baking done and she had a fun time when she made Christmas Eve deliveries! Of course a blog with Lia wouldn’t be complete unless it had one of her funny faces!

  1. Gosh, I want to try all of those recipes!! I love both pineapple and shortbread, but have never actually made shortbread cookies. It was fun to peek behind the scenes and see Lia getting the gifts ready. I bet that was so fun for her!

      They are both so easy Jeanine! I’ve made shortbread before but they never turned out good. They are a bit “crumby” but they melt in your mouth and are great with a cup of tea!

  2. Martha, oh yum yum yum!!! I have got to make the pineapple cream cheese snowball cookies! What a great exercise for Lia, what a cool bonding experience, and how touching that you then delivered them! Especially with 2020 having been so weird, you made kind connections with the neighbors that they will remember for many years. Merry Holidays!

      I enjoy baking with Lia and she loves it too. The snowball cookies are delicious with cinnamon spice tea! Unfortunately COVID kept us from visiting all those we delivered to but as we set them on the porch, Lia rang the bell and she got to wave to them from their door. Hopefully to bring cheer to many.

      Lia and I enjoy baking and sharing the goodies to our neighbors. They get so excited when they see Lia heading their way with bread or cookies Amanda.
