Chocolate Overload Cake with Raspberry Frosting

It’s Friday Story Time by Lia again and I’ve had such a busy week in South Carolina. I’ve been baking cookies but the other day I made a chocolate cake with raspberry frosting and loaded with chocolate frosting in the middle.

I made the chocolate cake from a package but instead of adding water, I added some chocolate coffee creamer to the mix. Once again I baked it on the oven Air Fryer setting and it turned out so moist.

Now for the fun decorating part. I made chocolate buttercream frosting and spread that between the two layers and around the edge. Then we had some leftover raspberry frosting from my Italian cookies so I put a little water with it so I could have it dripping down the edges after I frosted the top.

Ma wanted coconut on half so my made a line down the frosting and she added coconut to her side. Next I cut some Lindt chocolate candy balls, some were raspberry, some blueberry and the others were almond and put them around the top of the cake with some Cosmic brownies. To finish it over, I added Hershey kisses around the bottom of the cake. As I was twirling the cake around in the video, mommy was across the table maybe funny faces and I was trying not to laugh.

My friend Judy was over again so mommy, ma, Judy and I had to test the cake while it was freshly decorated. Everyone loved it! Ma got a little extra overload with triple chocolate ice cream with whipped topping. Everyone loved my chocolate overload cake with raspberry frosting. I even made boxes up for some special neighbors and one for Judy to take home for Andrew.

There is only one more Friday left in July and I went back to Indiana on Wednesday but I have a Friday Story Time I’m working on for next week. I’ll be back in South Carolina for two weeks in August, just before my 7th birthday and the start of going in 2nd grade. I’m excited to start school in Indiana and meet the friends I made in the last few weeks of 1st grade there.

I love to watch Lia when she bakes, paints or does craft projects, she is so focused on what she is doing. When she was frosting around the edge of the cake, she put the spatula down and went over to the cupboard. I asked her what she was doing and she said, “you’ll see.” She came back with a turntable to set the cake plate on. It was so much easier when she swirled the plate to add the frosting. WHY DIDN’T I THINK OF THAT WHEN I FROST CAKES??? Her brain is always thinking!
