Delicious Chocolate Mayonnaise Cake
My Grandmother Would Make
When I was in grade school, my grandmother would get breakfast ready for me and when my mom came home from work she would ask my grandmother why she gave me chocolate cake for breakfast. My grandmother smiled and told her there were eggs in it so no difference from that or eggs and chocolate milk. The cake grandma made was a delicious chocolate mayonnaise cake with a super fluffy white frosting, topped with coconut. Who wouldn’t love that for breakfast!
After coming across her recipe, the memories came flooding back so to the kitchen I went to see if it would be as good as grandma’s creation. I must say it was DELICIOUS!!
*******I mixed all the ingredients together, licking the bowl occasionally, just like I did when I was a child. I figured that was what made the cake taste so good! I added the cake batter to the pan, raised it a few inches from the counter and drop it. That’s the way I was taught by both my grandmother and mom to get the bubbles out of the batter.
*******I baked the cake in the same pan grandma used over 60 years ago and it smelled so yummy while it was baking. The cake came out perfect and while it was cooling a made the frosting as best I could recollect.
As I was mixing the frosting, I watched the peaks get stiff enough to frost. This took about ten minutes but it’s well worth the length of time it takes for the peaks to form.
But the best thing when grandma would make it, was her giving me a beater to lick clean. Yes, I did the same thing when I made my frosting!
I frosted the cake and then sprinkled coconut on the top. The platter that I put the cake on was even my grandmother’s so it felt like she was sitting right here with me.
Oh my, the cake was SOOOOO moist and SOOOOO delicious! As I was sampling it, I couldn’t help but think of my grandmother and how she loved baking. This is just another memory from way back that will stick with me forever.
The cake recipe is very easy:
CHOCOLATE MAYONNAISE CAKE
1 cup water
1 cup mayonnaise
1 teaspoon vanilla
2 cups flour
1 cup sugar
3 tablespoons baking cocoa
2 teaspoons baking soda
Blend the water, mayonnaise and vanilla in a bowl until mixed well. Gradually add the flour, sugar, cocoa, and baking soda into the mayo mixture until well blended.
Pour into a greased 11″ x 7″ pan and bake 350 degrees for 30 minutes or until a cake tester or toothpick comes out clean after inserting in the center of the cake.
WHITE FLUFFY FROSTING
1 cup granulated sugar
1/3 cup water
1/4 teaspoon cream of tartar
2 egg whites
1 1/2 teaspoons almond flavoring
Add the sugar, water and cream of tarter together and cook over medium heat until the sugar is dissolved and it starts to boil.
Beat the egg whites and almond flavoring together until it forms soft peaks. Slowly pour the sugar mixture into the egg whites beating on high speed until it forms stiff peaks.
Frost your cooled cake and sprinkle coconut over the top.
This cake is so moist, the frosting is so sweet and the memories are just wonderful.

My mother called this White Mountain frosting. I can’t remember if she cooled the sugar mixture before adding it to the egg whites. What did you do? If not cooled, would it cook the egg whites?
While I was beating the egg whites, I boiled the mixture. I only let it cool until it stopped bubbling and added it directly to the egg whites while the mixer was on. It’s delicious!! Thanks for stopping by Carol.
It looks delicious, even if I don’t like mayonnaise! I remember, when I was a kid, my mom gave one beater to my sister and one to me after she made the frosting for the cake. I could go for licking off a beater, lol.
I think if we don’t know what ingredients are in a product, we like them. Hubby doesn’t like Ricotta cheese but loves the Italian cookies I bake using cheese. (I never told him about the cheese until after he ate them) Actually the mayo replaces the eggs and oil so you don’t taste it! How I loved licking the beaters when my grandma baked! I love cake made with Mayo. I think they are softer and more moist compared to cakes made without it.
