Chicken with Rice Recipe
I mentioned previously that I’m trying to clean out the refrigerator and freezers before I stock up on anything. The other day I used up two leftover dishes from the fridge and two small vegetable packages from the freezer, it’s a start!
I’m not quite sure what to call what I made, it’s not really a casserole because i cooked it in a frying pan. But it was good and colorful! Since I don’t measure, I can’t give you an accurate recipe but this is it. Maybe someone can come up with a name for this meal.
Chicken with Rice and a lot more
Shredded chicken leftover from a Costco rotisserie chicken
Boiled rice
Chicken broth
Ricotta cheese
Shredded cheese (I used swiss)
Frozen peas
Frozen honey glazed carrots
Dried cranberries


I started by adding a tablespoon of butter with a swirl of avocado oil to the frying pan. After the butter was melted I added a cup of cooked rice and about a tablespoon of Ricotta cheese. On medium/low heat mix together then add the shredded chicken, cooked peas and carrots plus a cup of chicken broth and top with shredded cheese.

Cook until everything is mixed together then add half a cup of dried cranberries. (I love added those to so many of my recipes)

About fifteen minutes later, dinner is served with the last Reb Lobster cheese biscuit from the freezer. The honey glazed carrots gave it an extra sweet taste along with the cranberries.
The second day you could call it a casserole because I added crushed potato chips to the top and heated it up in the oven so the chips could brown a bit. This is one of those meals where you could add so many other things hanging around the fridge or cupboard. Maybe my Vegan friends can substitute ingredients to turn this into a Vegan recipe.
Little by little I’m making space and Wednesday I’m pulling out the pork to make pulled pork for Thursday. That will be another yummy meal. So does anyone have a name for my chicken with rice recipe?

Cheesy chicken n Rice casserole (I found a recipe for one of these cooked on the stovetop!)
I cooked meatballs using lamb with Waterchestnuts, mushroom and onions over purple cabbage in my airfryer, then simmered one in an Indian sauce with some leftover rice n lentils …. also yum! But no name!

I’ve told you before Lily, we are so much alike! Maybe we’re long lost sisters? LOL Costco has the best cooked chicken and I love pulling it off the bones to make another meal.
