Chicken Salad Sandwich from Leftovers

When you only have 2 chicken strips left, you might think there isn’t enough to do anything with.  Well think again because I made a delicious chicken salad sandwich from leftovers.

 

I cut the two strips in pieces and put in my blender with a cut up hard-boiled egg.  It only needs to be blended for about 10 – 15 seconds, just enough to chop the chicken and egg.  Next I added a teaspoon of pickle relish and about a tablespoon of mayonnaise and mixed it all together.  If I had slivered almonds I would have added them to the mix or even olives would be good.

 

You could serve this on a bed of lettuce or as a sandwich.  I opted to make a sandwich on wheat bread and was it delicious and filling.  Notice my fancy plate, since we have coffee filters left over from before we got our Kuerig, I use them as a plate!  There I go again, is it frugal or cheap?  LOL

So next time you only have a small amount of leftovers, be creative with what you make with it!

    With light mayo, this could be a very point friendly chicken salad (if chicken breast, it is zero points, as is the egg.) The pickle relish is a yummy addition, too.

      Yes, it is chicken breast Alana. I’m not sure about the point system, is that WW? I know nuts are also high in protein and I’d like to add them or olives next time. Let me know if you try it! Thanks for stopping by.
