Cauliflower Cheesy Breadsticks

One of my Facebook friends shared a delicious low carb Cauliflower Cheesy Breadsticks and me loving cheese had to try them!

I love cauliflower and made faux mashed potatoes so I when I saw this recipe I knew it had my name on it! This is my blog for the cauliflower potatoes.

I made the recipe the other day but cut the ingredients in half since I’m the only one in the family that loves cauliflower. It was so easy, not to mention delicious! Here is the recipe from Real Housemoms, they have lots of delicious recipes, you might want to sign up to their newsletter also.

Ingredients

1 head raw cauliflower

1/2 cup shredded Mozzarella cheese

1/2 cup grated Parmesan Cheese

1 large egg

1/2 tablespoon minced garlic (I used powder)

1/2 tablespoon fresh chopped basil ( I didn’t have any of this)

1/2 tablespoon chopped parsley (I didn’t have this either)

1 teaspoon salt (I never add salt to recipes)

1/2 teaspoon ground black pepper (I used a blend of pepper and spices)

3/4 cup shredded Mozzarella Cheese (save for topping)

Instructions

Preheat oven to 425 degrees F. and line a baking sheet with parchment paper or a silicone baking mat. (I used the baking mat)

Cut the cauliflower into florets and place in food processor. Pulse until it is the texture of rice. (Squeeze the raw, riced cauliflower in a paper towel if overly moist)

Mix the riced cauliflower, 1/2 cup Mozzarella and 1/2 cup Parmesan cheese, 1 egg, and the seasonings together until it holds together in a ball.

Place the mixture on the baking sheet and spread out into a rectangle about 9′ x 7′ and 1/4″ thick.

Bake 10 – 12 minutes, remove from oven and top with the 3/4 cup of Mozzarella cheese. Return to oven and continue baking until the cheese is melted and starting to brown. Look at the bubbling cheese while browning! The cheese is alive!!

Cool about 10 minutes and cut in breadsticks. They turned out delicious and oh so cheesy!!

These low card Cauliflower Breadsticks are healthy, delicious and easy to make and went great with my left over chicken breast with sauce and, you guessed it, cheese!!
