Have you ever started one thing then totally switch gears onto something else? That was me the other day when I decided to try my hand at Cashew Butter.

How it Began

I was reading a blog from my blogger friend Chef William about his ROASTED EGGPLANT & POMEGRANATE recipe and it looked delicious! It called for tahini which I didn’t know what it was so I did a search and found out this is a nut butter made from crushed sesame seeds and oil. One search led to another and it brought up the difference between tahini and cashew butter. I found out they won’t have the exact flavor or color but both work in recipes and of all the nut butters, tahini is the milder choice.

So what did I do after reading the blog, I made cashew butter! Okay so my mind wanders, I start out doing or reading one thing and end up doing something totally different! LOL I always have unsalted cashews on hand for making my homemade trail mix so that’s what gave me the idea to try my hand at making the cashew butter. I found out it was so simple and tasted delicious! I started out with only a cup of cashews to make a small amount to try.

I started by putting the cashews on a lipped baking pan and cooked at 325 degrees for about 15 minutes, turning half way through cooking. I let them cool before I put them in my little chopper and proceeded to watch the cashews turn into a creamy mixture.

At first the cashews turned into a crumb texture then it starting clumping together. I scraped the sides of the chopper to make sure the all the cashews would be thoroughly mixed.

Next they turned into more of a paste and then like magic I had a creamy blend of cashew butter. It was a bit thick so I added a small amount of avocado oil and when that was blended it was time to sample my creation.

I was pleased with how well my cashew butter turned out! It is suggested to use a food processor with four blades but my mini chopper worked good for my trial run. Now I think I need to add a high tech food processor to Lia’s and my wish list and retire out old Hamilton Beach and Ninja blender! I’m sure we could us it for chopping our zucchini and even ricing cauliflower. So I’m open for any suggestions if you have a favorite food processor!

      I still would like to try making tahini Cheryl. The cashew butter sandwich was delicious. Leaving in the morning, can’t wait, stay tuned for an update when we got home.

    I think I might have made this before! It’s so satisfying to make your own cashew butter. As for food processors, mine is an Oster FPSTFP1355 2-Speed 10-Cup Food Processor, 500-watt, Black. I think you can get a good price on ebay.

      It was so easy to make it also Julie! Thanks for the recommendation, my tiny chopper did okay but I’m sure a food processor would be even better. I’ll check that out!

    I have a (huge) Kenwood kitchen machine with lots of attachments, but the truth is, I don’t nearly use it enough.

      My mind wanders that for sure Tamara! I was impressed on how great the cashew butter tasted. I know it would be better and easier to mix with the right machine.

      I didn’t even know tahini was in short supply Roy, I just knew I didn’t have any but wanted to come up with something. I liked the cashew butter, by added a small amount of avocado oil it was very spreadable.

    I haven’t made cashew butter yet, but I have made nut butter (from mixed nuts) and peanut butter! One of these days, I’ll try cashew butter!
