Bye Bye Vegetable Garden
Yesterday was a sad day, it was time for our garden to come to an end. Between the super high temperatures and an 18 day drought despite hubby watering the garden every day, it was ready to say bye bye vegetable garden.
There is nothing better than fresh picked vegetables and we started our garden early April. From getting the soil ready, planting and Lia overseeing the project our garden had a good start. This is a blog I wrote when we were ready to plant. We planted summer squash, eggplant, peppers, cucumbers and leaf lettuce. http://themarthareview.com/vegetable-garden-planting-time/
The garden was growing great and a few weeks later we were picking lettuce and had blossoms on our squash. Lia is checking the lettuce out and decides it’s time to pick some for a salad for GGpapa. This is a blog I wrote on the progress of our garden when it was about a month old. http://themarthareview.com/vegetable-garden-growing/
We didn’t have as many vegetables as we have in the past but still managed to pick enough squash and eggplant to freeze for a few meals throughout the fall and winter. Lia loved to help pick the vegetables.
This is a blog I wrote when our garden was a few months old showing how I freeze the eggplant and my delicious Eggplant Parmesan recipe. http://themarthareview.com/from-garden-to-tummy/
But like all good things, they must come to an end. Our last picking was a few peppers, cherry tomatoes and a cucumber. We even had purple peppers!
We pulled all the plants out, tilled the soil and got ready for a fresh start. I’m hoping to plant lettuce the end of August so we can have garden salad from September to October, weather permitting. My other thought is to turn the vegetable garden into a rose garden but that’s still just in the thinking stage. Come next March I will get all excited to plant vegetables again so we can have fresh vegetables and restock the freezer.
This was our last dinner from fresh eggplant but we have some in the freezer for later!
