Broccoli Cheddar Breakfast Casserole
I’m on week three of my healthy eating plan and I’m finding some delicious meals to prepare. The other day my breakfast, lunch and dinner was rolled into one! This is a recipe I got from A Whole Foods Lifestyle with keto and Blue Zone Diets. Chef Chaney calls it a Broccoli Cheddar Breakfast Casserole but I call it an any meal casserole! It’s SO good and easy to make.
Start by sautéing broccoli florets, the recipe calls for using Avocado oil but since I didn’t have any I used the bacon grease that I had from frying up the bacon. The next step was to layer the broccoli, cheddar cheese and crumbled bacon in a baking dish. Doesn’t this look delicious already?
Whisk eggs and heavy cream together, add seasonings to taste and pour the mixture over the broccoli mixture.
Bake 350 degrees for 15-20 minutes. OMG did it smell delicious while baking!
I’ve prepared eggs and omelets may ways but I must say that so far this is the winner! By whisking the eggs with heavy cream, it makes them light and fluffy. The recipe is for 6 servings but I cut everything in half since I was the only one eating it. I should have used 3 slices of bacon but I only had two slices but it still had bacon in every bite. This Broccoli Cheddar Breakfast Casserole is a meal in itself and I say it’s healthy and delicious for any meal, breakfast, lunch or dinner!
